galactase Biochem.

  A proteolytic enzyme present in the milk of many animals.

1898 Proc. Amer. Assoc. XLVII. 232 The authors [sc. S. M. Babcock and H. L. Russell]..discovered an inherent proteolytic ferment in milk, to which they have given the name galactase. 1901 C. A. Mitchell tr. Oppenheimer's Ferments x. 118 Galactase..is stated to work best in weakly alkaline media, and to resemble trypsin, though not to be identical with it. 1937 A. L. & K. G. B. Winton Struct. Foods III. i. 185 The part played by enzymes in the ripening of cheese is complex. Some of these are derived from the milk or starter, others are formed by micro-organisms. Galactase..belongs to the former class.
