Hi there! This is Sharon, the creator of DelishPlan.com Today, I have a very exciting recipe to share with you. I am gonna show you how to make pho with zucchini noodles. You see, the bone broth is what makes this pho recipe really quick to cook. Because you don't have to make the pho base from scratch. I started making zucchini noodles lately. Oh my god! I'm obsessed! The reason we are going to use zucchini noodles in this pho recipe is not only because it's low carb but also because you don't have to cook them as regular noodles. All you need to do at this point is to toast a couple cinnamon sticks, star anise, and whole cloves. Then pour the bone broth over. Add ginger, fish sauce, and soy sauce. Bring to a boil and let it simmer for 10 minutes or so to allow the spices to fully infuse the broth. Then your pho base is ready. Pour the hot flavorful base into your prepared serving bowl with zucchini noodles and sliced beef. Add bean sprouts, fresh herb, and a squeeze of fresh lime juice. Hmmm... So yum! If you don't have the time to make bone broth at home, sometimes I don't, here's a great alternative. I love using Kettle & Fire beef bone broth as my pho base because they use 100% grass-fed beef bones as well as organic ingredients. As their bone broth is simmered for a very, very long time, all the collagen in the animal bones is broken down and released into the broth, supplying it with an insane amount of protein, antioxidants, and amino acids, which helps heal your gut lining and improve your immune system.
