either I'm chef Eric Crowley owner of the culinary classroom in West Los Angeles and today I'm going to show you how to fix or repair a broken hollandaise a hollandaise will typically break if the butter has been incorporated too rapidly or if the sauce is kept too hot those are typically the main two factors that would contribute to a broken hollandaise now if we wind up bringing my bowl of hollandaise over you'll actually see the the way that it looks when it's broken it's going to have a decidedly separated look to it you've got butter floating up on top of the sauce and you may even see that the egg mixture will have almost like a curdled look to it in order to fix this sauce in order to get incorporated you're going to need a clean Bowl which I have here I actually like to keep it over my pot of warm water so the sauce doesn't get too cold I'm going to need a little bit of water about a half a teaspoon to a teaspoon you take our clean whip and we're going to take our broken hollandaise and slowly pour it into the pot pour it pour it into the bowl rather while we're constantly whipping so I'm going to gather up the broken hollandaise and I'm going to get can actually see right up in the leading edge of the hollandaise here I've got a little bit of that separated butter I'm actually going to get that to drip into the bowl while I'm constantly whipping drop in there whip that into the water then I'm going to start to slowly pour the broken hollandaise in while I constantly whip come on give the bowl little shake in my right hand there we go so once you repair the broken hollandaise you can see it has a nice cohesive look to it again you're going to lose a little bit of volume but it's going to be a lot better than having to start all over again especially if you have guests waiting or you're looking to serve the hollandaise right away you may also notice after you reincorporate it a maybe a little bit thicker than what it was originally you can always just add in just a little bit of water stir in say about a quarter of a teaspoon or so and that'll thin down the sauce just a little bit and that is how you repair a broken hollandaise thanks again for watching be sure to subscribe so you can get some additional information if there's a recipe that you would like to see me make feel free to send an email to requests at Mahalo comm thanks again and I'll see you soon
