hi my name is Erica and my name is Ben and we are Ernest ice cream we're gonna make blackberries whirl ice cream ice cream is at its heart it's a very simple thing milk cream eggs which are actually optional sugar very important ingredient and whatever flavor you're gonna incorporate so the first step is combining a cup of milk 2/3 of a cup of sugar just granulated sugar and just a pinch of salt we're gonna warm this on the stove I'm just trying to dissolve the sugar and warm up the milk so if I start to see any tiny bubbles I've gone far enough and I'm gonna turn up turn the heat off for the rest of the creme anglaise I will you need five egg yolks so we're going to separate the eggs we're gonna whip the egg yolk and then to this we're gonna add our milk sugar and salt mixture that's been heating up on the stove perfect we're actually gonna put it back into the pot it's gonna go back onto the stove you want to be sure that you're constantly stirring it starts to thicken quite a bit and you'll feel a little bit to have a coating on the back of the spatula okay so we're gonna take that off the heat so here we've got a cup and a half of cream so that's the heavy cream and we're gonna add this hot egg and milk mixture right to the cream here just a half a teaspoon of vanilla here we're gonna set that in an ice bath or you can just refrigerate it for a little while and then it's set to go into your machine it's been sitting in the ice bath for a little while and it's chilled off so we're ready to put it in the machines usually work so it to be about thirty minutes that will run it for so for this ice cream we will be adding a blackberry swirl just a really simple kind of blackberry sauce that we've done out of the machine it's a bit like soft-serve consistency you're gonna put it in the container that we're gonna put in the freezer and layer it with the blackberry sauce you want to have a very little air exposure as possible and freeze it as fast as possible it will improve the creaminess alright so here we are we've got our blackberry swirl ice cream and it's all finished we've let it sit and harden up in the freezer overnight the longer the better ideally all right so thank you so much for taking part with our blackberry ice cream with us we'd love to see you at the shop one day we're at 399 to Fraser at 24th and I'll have blackberry ice cream and other seasonal flavors for you to try as well you
