so here are my beetroot leaves I'm gonna cut out all the leaves separated from the beetroot and wash them properly and the water and chop them like this and keep them all aside now I'm gonna chop green chillies and shallots and keep them all aside now heat oil in a pan and splutter some mustard seeds reduce the flame add broken red chillies to it and then add chopped shallots to it and saute until they become slightly tender and then add chopped green chillies and curry leaves to it and saute for a minute now add chopped beetroot leaves to it and saute for a minute and then bring it to the center from all the sides this will cook piece leaves fast and then cover it with a lid and keep the flame low and let the leaves become tender meanwhile I am going to grind little grated coconut garlic and cumin seeds into a fine piece and then add remaining coconut and grind it into a coarse paste and bit aside now looks like my betrothed leaves are tender and cooked so remove the lid and saute so that any moisture is tried out then add the ground coconut base to it and saute well until well combined add salt to taste and that's it my big greens or beet red leaves is ready to serve serve it with boiled rice in spicy curry chapati or hansi wish
