Please explain how to make angel eggs

my name is kim and i'm here to demonstrate for you how to make um what uh some people call deviled eggs i call angel eggs and these are our ingredients right here you have your eggs mayonnaise that new particular brand uh yellow mustard you could use dijon mustard if you wanted to in place of paprika i'm going to use old bay seasoning to top them off with a little bit of a little salt at the end as a varnish so i'm going i've got water in a pan and i'm going to add the uh turn the oven on add the dozen eggs or however many you want just make sure your eggs are covered with water you know there's enough water in the pan to cover them and then i generally add salt to the pan and um i just wanted to say we're going to put these in here so our eggs are boiling pretty rapidly and what i'm going to do is turn them down to a simmer to a low simmer we still want to keep the water simmering if you might want to take a look and um and then we're just going to let them simmer for um 10 to 15 minutes our eggs are just about done according to the timer it should be done and so what i'm going to do is turn the heat off and then i'm going to take the eggs right from um there remember we're going to try and not get that green ring which is harmless by the way that orange salt light is just it's color i mean it's it's a green color but it's it's harmless so i'm just taking the eggs out of the hot water and i'm putting them in the cold water to stop the cooking right away and um from what i understand too this putting them in the cold water like this also will do two things it stops them from cooking but it also makes the shell come off of the egg easily so the eggs have cooled in the water for two minutes now i'm going to take them and i'm going to just crack it on the counter here and then i'm just going to break the egg you know break so that the shell cracks now we're ready for our next step the next step is we're going to take our eggs that we've peeled and we've rinsed just to make sure there's no shells on them because and you're going to cut it long ways and we're going to try and check our yokes to see if we have that green color because it looks a little and we have a nice yellow color in the yolk okay which is exactly what we wanted now we're ready for our next step we've gotten the amount of eggs that we want to use for we've taken the amount of eggs we want to use for our angel eggs and we're going to take the yolks and we're just going to take a fork and we're going to press into the yolks to crush them okay so we're just going to crush the yolks see we have a nice yellow color which is exactly what we wanted instead of that greenish color okay so we're just going to crumble them up like that and now we're ready to add the other ingredients so now we've got our mixture and it tastes pretty good i gave it a little test and um so that it's uh like i like it and some people add pickles here some people like onions um you know there's all kind of things you can add to this if you like to make it different so now what we do is we're just going to take our mixture about a teaspoon like this full and we're just going to take and we're going to fill the cups okay now for our final step we're going to take our old bay and some people use paprika and we're going to sprinkle it on top of the eggs that'll just give it a little taste of extra seasoning do do you
