today I'm going to show you guys how to make one of my all-time favorite Laotian dishes which is now cow what that is is a crispy coconut rice that's been seasoned with red curry paste kaffir lime leaves grated coconut I'm going to be making my own version of this and I'm adding a little bit of chili garlic sauce Creek onion powder garlic powder those aren't normal ingredients that go in here but I really like this well seasoned because if you don't want to eat it in a lettuce wrap you can just eat it as is kind of like a fried rice awesome special ingredients that we're going to be putting in here the soured cured pork and this can be found at the Asian store in the refrigerator for anyone that likes this dish this is probably one of the favorite pieces in there I also picked up extra pork skin as well which can be found in the frozen aisle at your Asian grocery store we're going to start with prepping the grated coconut first this is a little bit too big I'm just going to run my knife through this really quickly can purchase this just a little bit finer so that you don't need to do this but this was all they had at my Asian grocery store the pork skin comes frozen what you want to do is take some of it out and then rinse it under cold salted water strain it and then it's ready to go so we're just going to run our knife through this just a few times just that back in the bowl for our now I'm just going to start cutting this out of the package now you just want to shred this up so to season the rice what we're going to need is red curry paste chili garlic sauce fish sauce sugar garlic powder onion powder salt paprika egg yolk and kaffir lime leaves go ahead and get that well combined you should be using warm rice for this because it'll help bind everything together you don't want to be using hot rice because it'll be too mushy and cold rice will just make it fall apart so go ahead and just drop the rice into this mixture get it well combined once you have it all combined we're going to form this into balls take a small handful and then I start pressing it together I have added the entire bottle of cooking oil in here I have it on medium heat and then I also lined a baking sheet with a cooling rack on it so that we can place the rice balls on once we take them out of the oil it's okay if someone that falls apart we are going to be breaking it up finish frying them through until you're all done now that we have it all broken up I am going to add the pork skin I'm going to add some lime juice get that well combined the last ingredients to go in are the scallions and the cilantro let's get it well combined some people do like to add peanuts to this but I'm not a huge fan of peanuts so I'm not adding it in now I'm going to show you guys how to eat this obviously put it on a plate but it's just me here so I'm going to show you guys how we do this you would serve it alongside some fried chilies and some lettuce you can have cilantro cucumber it is eaten like a wrap but you can eat it just as is spoon a little bit into your lettuce and you can grab a chili put it right in the middle roll that up like a little burrito and then you just yet hmm I'm sorry that was really ugly some people are really cute when they eat I'm not because I try to shove everything into my mouth you guys try this recipe please tag me on Facebook or Instagram I would love to see your pictures and of course if you guys have any questions my contact information will be in the description box below along with this recipe so I will see you guys next time bye you
