Please explain how to sharpen a knife on a sharpening stone (whetstone) to a razor edge!

in order to sharpen our knives we basically need some good sharpening stones it's a great guy to invest in some good ones like this one what's the class and this one a Japanese one one attack no it's actually German brand one attack dot de and the reason why we have two is that they both have two sides so we actually have four so the thing is we start with the 500 grit which is the course to remove the the biggest part of the problem then we proceed to the 1000 grit which is more fine and then if we want to make it really sharp we can proceed to 3000 grit and to 8000 grit which is really smaller this is the last part and it makes a really smooth razor-sharp cutting edge if it's also a good idea choose sharpening stones that have this rubber base because in this way you can put them on a table and they will not you know move when you sharpen so the first step is to take a bowl of water and submerge the sharpening stones in the water this needs to be done until the the stone stops bubbling that means that all the pores of the stone are full of water once the stone is ready you put it on its base and it's not moving much you take your knife and you can start sharpening now you can see that this knife has got thick blade it's a survival knife and it's got a thick plate and there is a deaf in ative angle at the sharpening at the bevel of the sharpening so you need to follow this if your knife has been has become screwed up and you know has lost this angle and it's not straight it's not flat this edge is not flat anymore you need to sharpen as much as you need in order to make make it to make it straight make it flat and also make it straight you know that it's flat in the same way all the way across the blade so what we do now is it's always a good practice to put some extra water on top and then you place it like that you place it flat and then you tilt it a bit until you meet the end of the edge of the bevel and then you press and slide press and slide press and slide you need to press otherwise if you don't press the knife tends to jump like jump on the on the stone and then what happens is that it destroys what you have sharpened it actually destroys the edge but further if you do it like that so you need to press it keep a firm a firm pressure on the blade and this way it will work perfect now there are people who use different technique or they use a different number of strokes from each side because you need to change you know otherwise you will not create a bear from one side the blade will go like that and you don't want it so it doesn't matter really how many strokes you will make it shouldn't be too many and it should be the same number from both sides so now we made three then I decide to just change and make another three from that from the other side I tilt it again I hold it firmly in that angle and then I slice it across and then I repeat making sure that it covers all the blade keep a piece of paper handy so you can test the knife and when it has become sharp you can change now it's sharp enough to proceed to the next step which is the thousand grit sharpening stone again a little water on the surface the water helps helps to make this kind of slime this nice you know slurry again pressure sliding pressure sliding sliding from the other side now pressure sliding and again and again repeat until you are satisfied with the result then put the next stone in place again wet it a bit the 3000 grit this time and slide the knife on it again with an angle I don't know if you can hear the difference in the sound but it's a very different sound the higher up the grit you go but more smooth the sound becomes again repeat as much as necessary at this point the plate is quite sharp but still we want to make it perfectly sharp so we will continue we turn it around exposing the Terra Cotta side which is the 8000 grid position the blade on it slide now you almost hear no sound at this point that's how fine it is you can repeat with some fewer strokes in the end to finish it off like two and another two and then one and the final one now I'm wiping off the blade there is quite a lot of metal that came off very small particles of metal or steel and now let's see how well it cuts it's it's like a razor at this point so you can see the difference even on the paper this is the first cut after the first rough sharpening oh this is the cut in the very beginning before I sharpen it although it wasn't that unsharpened at that point but yeah after the first rough sharpening you can see that you know it's a bit the cat is a bit rough after the second sharpening with a thousand grit it's much much much more smooth after the third one it's a lot a lot more smooth and at the end there is almost no no there's actually no nothing there it's just a perfectly smooth cut there's at this point the blades like a razor so this is Yanis combat scales with the apocalyptic Knights I hope you enjoyed this video and that you learned something from it take care
