and welcome to cooking companion TV I'm Jenna Edwards and you're watching a recipe demo of curried okra and tomatoes do from the southern farmers market cookbook give this video a thumbs up if you like it if you are new to okra doing it as one of the best methods for utilizing its most polarizing characteristic slime if you're an okra lover like me then you know that stewed tomatoes and okra is a popular combination at least in the American South it is nonetheless let's get started we'll start by bringing a large pot of water to a boil and peel three large tomatoes so score an X at the bottom of the tomato which means just breaking the skin you'll lower the tomatoes into the boiling water and let them sit for 30 seconds or so then let them cool in ice-cold water until you can handle them while they're cooling let's slice the okra when picking okra choose pieces that have similar width so it cooks evenly remove the cap and the tips both are unappetizing ly fibrous and tough then slice the okra and a 1/2 inch width will slice 3 cups which is a lot of okra more than you expected to be also dice an onion as a reminder here's how to efficiently dice an onion remove both ends leaving the root intact and slice in half then cut long ways following the natural lines of the onions then carefully slice horizontally and finally cut from the top down for an even dice and one last prep mince 3 cloves of garlic let's check on those tomatoes by now they should be cool enough to handle and ready to peel so start removing the skin I'm taking the extra effort to scrape the meat off the inside of the skin remove the core now cut the tomatoes into large chunks in a heated pan with hot oil saute the onions garlic salt pepper and 2 tablespoons of curry powder until the onions are soft or about 5 minutes add the okra and saute another 5 minutes now add the tomatoes with 3/4 of a cup of stock or water and you can add a pinch or two of sugar if your tomatoes aren't sweet enough I have not added any sugar because my tomatoes are sweet enough for me now stir it all together and let it stew on medium heat for 30 minutes or until the okra is tender to make this a full meal serve it with rice or even grits or polenta if you have some parsley chopped in some of that and stir it in at the last minute as I mentioned the slime of the okra will help thicken the juices and make this a hearty stew without extra fat or flour or thickening agents you can also play with other seasonings like Italian oregano and thyme that's it for this recipe demo for more information on okra check out my other video at cooking companion TV comm slash okra please subscribe to the channel and give some feedback with a thumbs up I'm Jonah Edwards with cooking companion TV we'll see you in the next video
