so anything goes you know whatever vegetables you like today I'm using onions garlic ginger potatoes sweet potatoes carrots oh Beijing's okra we've got some lovely fresh herbs in there like curry leaves and coriander and we've got some pureed tomatoes they're lovely spices use whatever you like let's go on with this one ok let's get moving here so I've got a pan here with some oil in now I'm using a coconut oil which I think works really well with this but you can use anything you want and if you wanted you could use ghee I'm going to keep this vegan today we're going to start off by putting in our whole seeds out garam masala so let's drop them in and then I'll explain what they are so we've got in there some cumin seeds coriander seeds black mustard seeds peppercorns I've got a few fennel seeds in there which are really beautiful I'm just gonna get them going on that hot oil they're gonna crack splatter either thing let's just do this for a few more seconds like 20 seconds and I'll be back it's such a lovely combination with that especially with the coconut oil ok now we're going to go in with some onions ginger and garlic chopped and I roughly chopped to my garlic and ginger you could use a paste if you wanted to now I'm going to get some vegetables in we're going to get our hard vegetables so today I'm using potatoes sweet potatoes and carrots so you can all go in right now see you your Hardee's vegetables in first and of course we're kind of working our way down to the softer ones later so what I want to do now is I just want to cook these like this for about four to five minutes stirring all the time now these vegetables are still very hard but they're certainly on their way at this stage I'm just going to add here I've got some fresh curry leaves if you can get these in there absolutely wonderful I'm very lucky that we have them in abundance where we are just stir them in and I'll be back in about another two minutes where we will continue adding more vegetables and spices at this stage I'm going to get some spices in here through our powders I've got some salt there then I've got chili powder coriander powder and tumeric about equal parts pepper teaspoon each in they go you could add cumin powder as well if you wanted I'm just leaving that out on this one today and if you want you could just use a regular carry out of your choice a little bit yeah some more vegetables here I'll put some green beans just a few of those in they go and eggplant again let's stir this around on this medium or just above a medium psychic type heat and we're going to cook this for about another three to four minutes some lovely lovely aroma is coming off this now nearly pretty much on its way now optional but I'm going to go in with some green chili fresh green chili and I'm just put them in home in what I do is I just cut them open like that and then in they go but totally optional now I've still got one more vegetable to go which is going to be my aqua but that's not going to go into the next stage it is first we're going to add some here I've got some fresh tomatoes and I've just pureed in a blender something that goes may look a little bit strange kind of white but that's what happens when you little guys switch to Martha it will change don't worry about that so in this goes now we're going to lower the heat a little bit and we're going to let this go now for about five to six minutes give it a stir every now and then unless you can see this has changed color as promised and I've got a lot more liquid out of it once it kind of starts cooking it kind of breaks down a little bit and creates this which is wonderful okay at the station and read my last vegetable which for me is okra I mean of course you could be using anything here you could be using some mushrooms zucchini bell peppers beets celery everything goes doesn't it in this one now again I'm going to cook this for about four to five minutes I mean depending on how you like your okra but check out your hard vegetables like your your potatoes and your carrots that's the kind of benchmark now we need them cook nicely and then this is pretty much going to be done if it gets a little bit dry now you start to lose a bit of liquid just a little touch of water it's going to be fine I'll be back for five minutes wonderful all my vegetables are cooked to how I like them just going to finish this off we have a little bit of fresh coriander or cilantro which is absolutely wonderful if you want it maybe a little splash of coconut milk in there would be delightful okay
