[Applause] hi welcome back to sweet scent beyond my name is Ida and today I'm showing you a vegetarian dish a poor weakened vegetarian dish it is stood eggplant it is very easy to make and it tastes amazing here are the ingredients here I have two pounds of eggplant it's the long purple vegetable which I cut up in chunks I had this soaking in water with about a tablespoon of salt to get rid of the bitterness and this is what we have it doesn't matter that it's not even it'll all cook together we have half a cup of tomato sauce about three tablespoons of sofrito two minced garlic cloves about eight to ten dollars two tablespoons of canola oil and in here I have half a teaspoon of oregano 1/4 teaspoon of cumin 1 packet of sazon with culantro and a choatic and just a handful of cilantro this is all we need to make the stewed eggplant in a large pan at medium high heat I'm going to place the canola oil and the sofrito are going to stir fry this until it's nice and quiet so after a couple of minutes we're going to add the cilantro fill away cilantro the tomato sauce and this is so easy to make and you can serve this as a main dish with white rice or you can even do it as a dip see look up pretty I'm gonna cook this and now we're gonna add our spices our olives so this is going to cook maybe a couple of more minutes until everything is nice and incorporated so I added the eggplant and if you notice I'm just moving it around make sure everything is nice and coated I haven't added any water the eggplant gives out a lot of water so we're just going to make sure everything is nice and coated and we're going to cover it medium-low heat for at least 10 minutes and we will be back in ten minutes to check on the water level so it's been about ten minutes and look at this see the difference I haven't added any water how beautiful this looks so if you want to see more videos like this hit that's like button and even better subscribe to my channel so we're just going to move it around but if you want it a little bit saucy of course you get at least half a cup of water if you want but I think it's perfect just like this so we're gonna cook it ten more minutes and then it's time to eat so here you have it my version of eggplant stood egg cut how pretty this looks and you can serve this with white rice just like if you would do a beef stew or it or chicken stew but I like it as an appetizer so regular cracker you just put it just like that good top and you can serve it as an appetizer so if you liked this video thumbs up even better subscribe to my channel all my links to my social media to my Facebook and to my Instagram are in the description box down below there's nothing else to say but what if you know each other it's hard hmmm try
