hi i'm rachel from rachel's guess tutor pretty witty cakes and in today's little freebie tutorial i'm going to show you how to make a lemon sugar syrup now sugar syrups really fantastic for brushing on top of your cakes before you sandwich them together or maybe when you've baked some cupcakes you want to brush some flavored syrup on the top of the more it's going to give everything a really nice flavor and keep it all super moist so it's a really simple thing to make so what we've got here is some lemons and some sugar and that's all we need to make our sugar syrup so what you're going to need to do is cut your lemons in half and juice them so we're looking for about five tablespoons of lemon juice or the equivalent of two fluid ounces or 15 milliliters okay so squeeze your lemons and then i've got a measuring jug here so we're going to go up to 50 mils let's see what we've got in here okie dokie so that's our lemon juice measured out so we're going to pop that in a pan with 80 grams of caster sugar now I've chosen caster sugar over granulated because it's just going to dissolve quicker and we're going to pop that in with our lemon juice there we go and then we're going to take it over to the stove and we're going to heat it so we just bring it to the boil while stirring at the same time you can see in there it's quite sort of white and cloudy and that's because our sugar hasn't dissolved yet so we're going to take that over to the stove and bring it to the boil just very quickly until all the sugar has dissolved okay so here is our sugar syrup I bought that gently to the boil just to allow that sugar to dissolve but I'm not boiling it for more than a minute okay otherwise you're going to end up with a really really sticky syrup you can see that it's nice and clear and that the sugar has dissolved so that's our lovely lemon sugar syrup so pop that in a bowl or a jug ready to use later and do allow it to cool down there you go you can see that's all absolutely delicious and it's going to make your takes super moist that's to make lemon sugar syrup you
