If you like lamb you are going to love
this recipe. Italian lamb stew. I'm Tess and welcome to my kitchen. This Italian lamb stew recipe is good
and rich! Very comforting. The recipe comes from Jamie Oliver's
channel from Chef Gennaro and is called his classic Italian lamb stew. My remake
recipe is a couple variations from his as i use what i had on hand. I have to say the taste is incredible!
And i thought i would share with you all. In a deep saucepan on medium heat i'm
adding about a quarter cup of good olive oil. Enough to cover the bottom Adding about 4 anchovies with a little
oil. Just stirring and breaking up. Mine seem to have capers in the middle and, all the better! In goes the lamb pieces and this is about one half pounds of
cube leg of lamb. I kept the pieces a nice rustic size. You
can also use lamb shoulder or lamb belly which is the breast. Just a touch of salt because the
anchovies are salty and a little black pepper. Stirring and cooking for a couple
minutes until the meat is no longer pink. In goes some mini carrots and letting
them cook for a minute. Next I'm adding some diced onions and
celery. Just giving everything a toss and letting it cook for 8 to 10 minutes
stirring occasionally. I want to get all the flavors going and
help cook down some of the liquid. Just a reminder you can find this recipe
in the list of ingredients in the description box below. Tossing in some fresh sliced garlic.
Lemon and garlic love each other! Here i have a bundle of about eight
nice-sized fresh sprigs of thyme. Just tying them together to make it
easy to remove at the end. Yes, you can use dried thyme and adjust
the amount to your liking. For a little kick I'm adding in a sliced chili. Giving
everything another good toss and cooking for a minute. Next is some liquid and this is one cup
of white wine, and to balance the flavors i'm adding a touch of vinegar. Giving
everything a good stir. Bringing up to a low simmer, covering and
cooking for 35 to 40 minutes. Occasionally stirring. The smell is
beyond awesome. It's been 35 minutes and you can see the
stew has reduced and thickened. Next I'm adding some have red potatoes. I'm seasoning the potatoes with some
salt and black pepper and then adding some cherry tomatoes. The tomatoes will
break down and make the stew nice and rich. For a little more liquid i'm adding
a cup of chicken broth, giving everything a good mix, bringing up to a simmer,
covering and cooking for 20 to 25 more minutes or until the potatoes are fork
tender. About every five to ten minutes I will give it a stir to help everything
cook evenly. You may need to add more chicken broth
as the stew cooks and reduces. If you like this Italian lamb stew

favorite, peas! Giving everything a good toss and cooking for three to five
minutes just to heat the peas through. And we are ready to eat! This Italian lamb stew turned out
amazing! I love the flavorful rich broth with all the wonderful vegetables. The lamb is delicious and very tender! I'm topping with a drizzle of good extra
virgin olive oil! I didn't have any but some chopped fresh
parsley would be great on top. This lamb stew was delicious and very
