all right so silver Gin Fizz now the word silver and the word fizz means a lot in this cocktail fizz is a family of drinks that is always made without ice and with some club soda but when you put silver into it that means adding egg white now the idea of putting egg white in a cocktail may frighten a lot of people but to be perfectly honest with you this is a staple ingredient that really should be behind every bar and at one point in time it was it was used in sours fizzes and everything else and sometimes even throw in the OL can we call the golden fish but in this case we're just gonna make a classic silver style Jen fits so let's strain the egg whites into the glass and then we're gonna go with 3/4 ounce of lemon juice 3/4 ounce of simple syrup and then it outs and a half of a really nice quality dry gin now another thing about making a drink with egg white is that you really need to shake the hell out of it to make this thing right it's all about texture it's about emulsifying the ingredients and to save yourself a little bit of physical pain and agony and also make sure that you get this done the right way we're gonna do what's called a dry shake so we're not gonna add ice but we're gonna shake this up get everything mixed together before at nice so once you've done that break your shaker apart add ice into the mixing glass and then back into the shaker and we're going to shake this thing for about 30 seconds alright so again this drink is all about texture once you've got that thing nice and shaken up you're gonna strain it into your Collins glass without any ice and a little bit of club soda and fill that up now once you're done you really don't need a garnish on this drink but if it's done right your straw is gonna stand right straight up that means you've shaken it well enough and it is ready to go here we have classic silver Gin Fizz
