three California yellowtail farmers market bag brought to you by specialty produce and Catalina off sharp yellowtail it's what's for dinner here we go please this is a great piece of fish so today what I'm going to do is you see this right down here that's the blood line and see the blood line right in here so what this is is as a tendency to be a little gamey little Fisher a lot of people like it some people don't but we're going to try something different today we're going to cut right down the center we're going to remove the blood line great source of protein for your canine friends and if you're a cat person those guys like it to see the blood line still in it a little bit in and along here what we're going to do is are going to lay our hand firmly and I'm just going to run my knife right down the edge and roll it over we're going to save that for the dogs and cats living together complete anarchy Bill Murray ghostbusters there we go now we're going to take this and I'm just going to make some cuts here a very simple easy way to make what I like to call American pokey we're just going to cut it up into chunks just like this like that not too much I like my stuff chunky it did sound too good I like my stuff chunked we're going to toss it it's all we're going to do and we get this other one going here we cut it up remember California yellowtail sustainably harvested in the lung Baja also up into the Sea of Cortez a great source of protein right now it's game on if you're in San Diego you know what I'm talking about yellowtail in La Jolla the Coronado Islands pretty neat all right now I'm going to use a wooden spoon because if I use the metal spoon it gets that weird metallic stuff going and I'm already weird enough we're not trying to do anything here we go Japanese dressing very simple shake it up a little bit we're just going to drizzle it in there just like that maybe a little bit more I have here a little bit of ground ginger I'm just going to take that through that in a cat I'm going to take a lemon we're just going to squeeze a little bit in there so I know what I'm going to do is I'm just going to mix it up like this okay now this goes in your refrigerator we're going to take it Rebecca and I are going to eat that for lunch in you're not farmers market back Saturday specialty produce remember you are what you eat thank you again for your support on behalf of Catalina and specialty produce and all of us that work here see you next week
