Please explain how to tenderize collard, mustard & turnip greens

good evening today is the fourth
Sunday of July yeah we have one more Sunday in this month this is
July 22nd 2018! what I have here is some turnip greens
sometimes turnip greens can be a little bitter so these are also a little
tough so I've added a little vinegar because that kind of helps with the
toughness that didn't seem to cut it I added a little sugar because they were
bitter another tip I have sometimes stuff like this you just have to season
until you get the flavor right I boiled one (1) ham hock I boiled them all
the way down because I fell asleep while I was cooking so I took all that fat cuz
like i said i don't like the fat. I put the little meaty part here I've added
vinegar tony's seasoning I added a little oil that I use like for frying
chicken that you save I use some of that and to tenderize I have here a 1/4
of a teaspoon of baking soda I'm not gonna use the whole thing see how it does I
didn't even use all of it I use 1/2 of a 1/4 so what is that? an eighth (1/8) of a teaspoon, a pinch oh, excuse me I threw the measuring spoon in the sink that's all I'm gonna use to
tenderize this you don't want to use a whole lot because what it does is kind of
give it like a slimy consistency so if you ever get some greens and they are e real
tough that's how you tenderize them just put a little, really it's just like a pinch
of baking soda and let them cook and they should be fine enjoy your day
