I hope the people here from fundament or companies and today we're coming to you again from Cape Cod we've been fishing some saltwater and what we like to do is give you a demonstration on how to fillet the skate okay let's take a look at this skate this is an average-sized ski and it's actually called a queer nose skate and you can tell by the clear picture here on the nose and these are bottom-feeders they've got a mouth here that comes out and they just basically inhale their food off the bottom so what we're going to do we're going to invite Claudio over to clean this skate up and show us how to fellate it okay so what Claudio is going to do is going to fillet this and what you want to do here is you want to keep the actual wing the wing is the portion that that you want to keep and in order to do so first thing to do is to just make an incision because you want to remove that skin and these fish are a little bit tough that way but you want to basically make an incision around that skate wing and then usually with a pair of pliers what you can do is pull that skin right off of that flesh and that's what Claudio is going to do here now just get a good grip on it and the bigger they are the tougher they are and just pull back and rip that skin off of that off of that Filat there you go perfect so that's one side there and what you do is you do the same thing to the to the other side make an incision and you want to remove that skin now that particular wing has got some that there's no bones in it it has cartilage in it and that cartilage is is edible and it's soft in nature and what you could do with that wing you can either fry that if you'd like but it is actually an excellent fish to use if you're making a fish soup or a chowder of sorts is that the flavor is actually excellent and it just makes makes a fish chowder or fish soup come alive so anyhow all you want to do is cut that wing out and that's it there is your one skate wing you do the same thing on the other side and like I says add it to your soups or fry it up and in your favorite batter either way it's very tasty it's sold in many stores if you don't catch it you can buy it and enjoy it one way or another so till next time folks good luck and good fishing you
