with CopyKat.com. Today, I'm going to show you
how to make JoJo Potatoes. These potatoes are fried just
like chicken fried chicken. So let's go ahead
and get started. You're going to begin with about
four to six russet potatoes. Now, I get medium sized
ones, because they're about four inches long. If you're getting potatoes
that are much larger, plan on cutting them into
eighths or sixteenths so you don't have
something that's not of a reasonable size. I'm going to soak
these in water. This will help knock off that
little bit of starch that's often on the outside of
potatoes and keep them from looking brown. All right. Two cups of flour, one teaspoon
of ground black pepper, one teaspoon of salt, and
one teaspoon of garlic salt. And you're just going to blend
this together with a fork. This is a great
basic batter that you could use on mushrooms
or onion rings or, well, how about
chicken fried chicken? That would work too. All right. So we're just going
to stir this up. Now, I'm going to use
buttermilk for this recipe. I really want to
use something that's going to help me develop a
really thick, crispy crust. And for me, buttermilk
is my go to for this. All right. So we are going
to batter them up. And battering is
very, very simple. We're going to go dry, wet, dry. We go dry first, to just
help coat the potato. And then, we stick them
into the buttermilk. The flour will help the
buttermilk stick on. And then, back into the
flour and coat that really well, so we'll get two
layers of a crust right here. And you really want to
get a good crust on these, because these potatoes are raw. They haven't been
precooked or parcooked or anything like that. So you want the crust to
form up around there so they don't lose their moisture. So they actually end up
kind of fluffy on the inside and crispy on the outside. It's a great combination here. So I also just put these
when I'm making them, I put them onto a wire rack
and let them kind of dry and set up for
about five minutes. Now, you're going to deep
fry these at 350 degrees for 8 to 12 minutes. You're going to know they're
done, because they'll float or they'll be golden
brown, like this. And your end result is
going to be wonderful. It's going to be
crispy on the outside and it's going to be a
little fluffy on the inside. So I hope you enjoyed this
