okay so um i'm going to prepare a quince this is um a beautiful beautiful example of them they're they're kind of muscly knobby in a wonderfully medieval way they kind of remind me of reuben's women they're harder they're in the same family as apples but they're much harder more like you'll see all these kind of stony cells that are like what you'll find in the center of a pair and the best thing to do to core them is to have yourself a good core and then i just cut it out and i'll even cut the little base and the stem coming down and then uh and and then i peel it again very simply in the way that you would peel an apple um if you get a quince that has some of the gray fur on it um which is its wonderful natural anti-pest control or pest control and um don't worry about cleaning it up until afterwards so they'll so here it is i'm i'm uh it's ready to cook i'm gonna give it a quick rinse under the faucet um just to get off anything and you could scrape out a little bit more of the center section but that piece is ready to go great thanks peter yeah so there's that
