on tonight's episode we're going to be making quinoa croquettes let me show you how it's done now to begin I have 1 cup of quinoa which we're just going to cook to the package directions I have 2 carrots which I'm going to grate small onion here which I'm also going to grate I'm gonna add to that a couple of minutes to close with garlic and have some Manchego cheese of which I'm going to grate about 1/4 of a cup of and I forgot to mention it before which we're also gonna want a nice kind of handful of fresh parsley once your quinoa is fully cooked you're going to want to transfer it to a large bowl and let it cool down now that our quinoa has cooled down we're going to go ahead and add our veggies and parsley mix our grated cheese we're also going to add one egg and a quarter cup of flour so now that our mix is all well mixed together we're gonna go ahead and form these into little balls now I don't so inch and a half to two inches in diameter and then set them aside on a parchment-lined plate and lastly we're gonna cook our croquettes in some canola oil over medium-high heat flapping them down as they go cooking them about 4 to 5 minutes per side until they're nice and golden brown and there you have it quinoa croquettes these are light and crunchy fried obviously but not at all heavy and they'd be great he didn't just on their own or with your favorite dipping sauce I like mine with a little Cajun aioli see you next time
