Hello and welcome to 'Masala Trials'. Today I'm making a traditional
Chettinad Mutton Curry. This is the deliciously sweet sleep
inducing Mutton Curry that, just makes you feel happy. Like for the lack of any
other terminology. It's tasty and it just fills you with joy. So let's just get started. So we're going to start with grinding
all the masala that is required. I've got two pieces of Ginger as well. A few cloves of Garlic. So now to this I'm adding Cinnamon. Cardamoms. 4 dried Red Chillies. 1 and 1/2 tsp of Cumin Seeds. I've got about a tbsp
of Fennel Seeds here. Adding another 2 tsp of Pepper. So now to this I'm adding some
freshly desiccated Coconut. To this I am going to add some water. So as you can see it's a super
fine smooth paste. And that's how you want it. So now I'm just gonna leave it
here and get on to step 2. Let's forget about it for the next
5 to 10 minutes. Okay. Take a heavy bottomed pan,
and to this add some Oil. You can use any kind of Oil if you
like Vegetable or Coconut. To this I'm going to add about a 3 inch
piece of Cinnamon broken down. We're gonna add about
5 pieces of Cardamom. And just sort of let it crackle a bit. It won't really crackle, I just
want it to be cooked in it. Okay. To this I'm going to add
about 7 to 8 cloves of Garlic. To this add just a few Curry Leaves. I've got about two medium sized
Onions cut into thin slices. To this I'm also going to add some Salt. I like adding Salt at this stage because
it just helps my Onions cook faster. You can also add some more
later as per taste. Now let's add the spices. I'm going to add about 8 teaspoons
of Coriander Powder. Just give it a good mix. Now I'm going to add about
3 tsp of Chili powder. And 1/2 a tsp of Turmeric Powder. Give it a good mix. I'm also going to add some
more Oil into this, because I have it very little
in the beginning. So I'm just going to keep on adding
as and when I feel it's required. So do you remember the masala
paste bit already made. I'm going to take some of that
and add it to our Onions. So I'm going to add about
3 tbsp of this. Give it a good mix. you can already get this lovely aroma
of all the spices we've ground, and put in the Oil etc. I'm just going to add a little bit
of water to loosen it up, and help it cook faster. Now I'm going to add my
Mutton pieces to this. So I've got about 450 to 500 grams here. With bone, if you prefer boneless
feel free to use, there's no standard rule for this. Give it a good mix. Once it's mixed together
what I'm going to do is, I'm gonna put the gas
on really high flame. And just keep stirring it. Not going to add anything
more at this point. Till it's completely sort of
stirred and got the heat. So now to this I'm going to
add some Tomato Puree, This is roughly about 2 medium
sized Tomatoes, that I've pureed at home right now. So you can just do the same as well. I find it a lot more tastier than
the store-bought puree, So I prefer doing this on my own. Okay, just give it a good mix. To this I am going to add some water. So I'm not following an exact
measurement for this. I'm going more of I'm
just mixing it in and, I just want my Mutton to
be soaked in water. So now I'm just going to cover
it and leave it on low flame, for roughly about 40 to 45 minutes. Because that's how long you need take
for the Mutton to be really tender. This smells so lovely, like my whole house
is smelling of these spices. And that's how I know my
Mutton Curry is cooked. So it's almost done what
I'm gonna do now is, I'm just going to put it on a really high
flame for the next 5 minutes. And keep stirring it just to get or like
a more viscous Curry or Sauce. So let's do that now. Just keep on stirring it. So now you can see how like thick the
Curry is and that's how you want it. I hope you enjoyed this recipe as
much as I've enjoyed making it. The best way to eat this curry is
with a bowl of hot steaming rice. There really is nothing else
