okay time for another short video from living for the outdoors and a lot of people asked me when we talk deer hunting what is this sweet meat a lot of times that meat is confused with what we call the loins the back straps that run down the outside of a whitetails back and actually the sweet meat is an inner loin and if you look right above the chest cavity you're gonna see them they both run on the inside of the deer and this is a sweet meat very easy to get out of the deer the first thing you're gonna want to do is you're gonna want to take your knife make sure enough to cut into them and you're just going to want to clear all this stuff away so you can get into the sweet meat and you'll barely have to do any cutting to get this meat out if you look I'm putting my finger right behind it and you can pretty much just take your finger and take this meat up so let me go ahead and get this cut away and then we'll go ahead and remove the sweet meat and this is the meat that you want to marinate and you want to grill first on your deer don't worry about freezing it get that marinated get that grilled and get that in your stomach because that's the best thing you're gonna have that's your reward right after you shoot your buck okay as we get started the first thing you're gonna want to do is you're gonna want to make sure not to cut this section of meat you just want to take your knife now this is a semi stiff boning knife or you can take a fillet knife and you just want to work some that cartilage in fat off of around that sweet moon watch your fingers you kind of work at done with your fingers and you can loosen that up and get that ready to come off and there's barely anything holding that meat onto the bun so work it around get your hand back into there sometimes you have to cut very little just help loosen it up I always take my knife I actually hold it like this in my hand help and you just barely use the edge of the knife and you cut out a really nice piece the best cut the tenderloin is sweet meat of the deer and you can see how cleanly that came out take your time with it this is something you're gonna want to put on the grill and eat right away and there you go there's your first cut depending on the size of deer on a small doe you may not get much of a cut out of this but on a nice buck you nice cut so there's a first one second one has a little blood shock around it you're gonna see how clean it comes anyways okay as we get started on the second one we've cleaned a little bit of this fat away once again on the other side I'm gonna do my best with my finger to get it and you can get in here and you can just slowly run your knife pull with your finger around the tip you might blade down and you trying to get that meat loosened up there run it the whole way up into where it meets with the high order and that's where I'll cut it off on the top at this point you can just take your finger start pulling it down you don't want to rip away at it if it doesn't come out that easy get the tip of your blade back in against the bun and just make some contact cuts you just want to barely make contact with that bone and this will start falling out as you see right now it's just kind of filling out of the deer just like peel out let it come the whole way down you get to the bottom you'll have to make a couple more little cuts making sure to get all of that sweet meat you don't want to ruin any of it in there you go the first one we got two of them on there a lot of times you can just take your knife and take the blade sideways and you can get a lot of that blood shocked and a little bit of silver again top layer off there you want to just work at it so they keep clean off any fat clean off any blood shot clean off any source again in hair and get it nice and clean you'll see me also when I'm working with this knife a lot of times you'll see me take the side of this knife you can get hair off I was taught by a good friend Joey on how to get hair off of meat real easy when you don't have running water your situation is without running water a lot of times running water will just push that hair down into the meat you take the side of your knife you running across your meat and it pulls off a lot of that hair in that blood shock you can see this one's come pretty clean sometimes you get a couple scraps for your burger off there don't take too much you don't want to throw this in the burger we've got one clean we'll take what was the cleaner one and once again does it boss some of the silver skin turn your knife sideways tend them out at the end where it was held on take that you'll watch them taking my knife sideways you pushed too hard this meat so delicate it's gonna fall apart make sure you don't do that thank you nice sideways against your cutting board and once again depending on how seriously you want to clean it to me that's perfect right there the hair off there and there you go there's a sweet meat next time you shoot a buck your butcher yourself you're gonna take the challenge on make sure you cut that out first and you get that some people don't like to marinate some people would rather seasoned it rub it however you like it cook that on the grill it's a treat for yourself that's why we're out there that's why we're harvesting deer so we can have this nice clean
