well my name is Thomas Safi I'm the executive chef here at the channel Hotel in Newport Rhode Island and today we're gonna teach you how to cook lobster tails first thing you're gonna want to do is to make your life a little easier is to blanch the lobster so you're gonna take a skewer stick it right up it make sure it's nice and strong sometimes they may break up see me that's put another one on there would you get that done you're gonna take it put it in a pot of boiling water for about three minutes and when it comes out we're gonna show you how to cut it up so you can boil it okay so once it comes out of the water you're gonna cool it down a little bit to make it life a little easier I'm gonna separate the tail from it gently flip skewer out take a picture pair of kitchen shears I'm gonna go right down a little bit for the tip you don't expose the lobster-tail it should still be pretty raw in the middle so it won't come out of the shell this is a Maine lobster so it won't come out of a shelf and people are used to seeing Caribbean lobsters which they actually pop right out of the shell and take a skewer put it back in to keep it nice and straight take a little butter softened butter we right on top of here a little salt and some chives so that's how you would set up to boil lobster you can actually click this on a grill or in your oven I'm chef Thomas Huff eat and that's how you boil off sale thank you you
