nina and this is my first time uh catching razor clams and then preparing them so this is how it's done first the razor climbs in the bucket it's in there grab it out grab your tongs water that's hot but not boiling and you put it in for 10 seconds one two three four five 6 7 8 9 10. you can hear that the shell is popped off you immediately put it into cold water the water looks a little dirty because this is my last razor clam and you cool it down and you can see the shell came off next kind of shake it off bring it over to your sink remove the shell it comes off really easily and i'm just putting the shells in this bowl as i work so the first thing you do is cut off the black tip of the siphon then you cut down the siphon on one side and just all the way free those up then cut down the other side that way these are the gills you kind of pull those out and this is the main part of the the meat that you can eat so i just kind of been washing it off and on the internet it said the number one rule is no anything that's not white you want to remove and then i'm putting it in my pile now there's more that you can eat of it so you want to go to where the gills are on the on the digger cut up and there's not really i mean there's a lot of techniques on the internet but pretty much just open it up and take out all the parts that aren't white the internet said this is the enzyme that helps them digest the food you want to keep in the white fatty part that's the good that's the part that tastes really good just rinse it both sides kind of do a once-over looks good put it in there then i'll go on so that's how you get it ready for cooking
