Please explain how to make plum wine(plum liquor)

delicious plum wine with special ingredients. There are 8 steps
to make plum wine. Step1: clean the jar Step2: wash plums Step3: skim off scum of the plums Step4: wipe off the water on the plums Step5: hull the plums Step6: put the plum and sugar crystal in the jar Step7: pour liquor Step8: keep in cool dark place for 3 months to 1 year With these 8 steps, you can make
delicious plum wine. There are 4 things you need to prepare. 1kg plum Here, we use freshly harvested
Beninanko plums Unripe plums will get ripe in 2-3 days
at normal temperature, so you'd better start making
right after you get the plums 600g sugar crystal Here, we use sugar crystal from
beet sugar made in Hokkaido. If you like sweet plum wine,
put more sugar than this. 1.8 litter Shochu
Here, we use "Komedake Liquor", liquor made from 100% rice. Use liquor that contains
more than 35% alcohol. If less than 35%, extracting and ripe of plum
will not be enough. 4-5 litter capacity jar which has tight-fitting lid. It's going to be easier if you have pick or bamboo skewer,
paper towel, and a clean towel. So, let's actually start making
plum wine. Step1: clean the jar Sterilize the jar using
alcohol spray for food, which you can get at drugstores.
Spray inside the jar and wipe with paper towels. If the jar is wet,
it goes moldy so make sure the jar is completely dry. Step2: wash plums Wash unripe plums carefully.
Use cold water to wash plums. Step3: skim off scum of the plums Soak the plums into more than 2 litter water
to skim off scum. Soak for 1 to 2 hours
if they are unripe plums. If you skip this step,
the bitter taste will remain in your plum wine. If the plums are yellow and already ripe,
you don't need this step. Step4: wipe off the water on the plums After scum is taken away,
wipe the plums with clean towel. Wipe carefully and make sure
the plums are completely dry. Step5: hull the plums Hull the plums one by one carefully
using pick or bamboo skewer. The unremoved hulls
make the plum wine taste acrid. In order to make
fresh taste plum wine, this hull step is
very important. Step6: put the plums and sugar crystal in the jar Put plums and sugar
into the jar alternately. Don't put all at once.
Half amount each time should be good. Be carefull not to
crush the plums. Step7: pour liquor Pour liquor into the jar.
This time, you can pour all at once. Here, we use "Komedake Liquor". "Komedake Liquor" is a Shochu
specially for home-made liquor. It goes well with plum. Step8: keep in cool dark place After putting all the ingredients,
close the lid tightly. Place the jar at cool place
where temperature is relatively stable. Keep it for 3 months to 1 year. After approx 6 months,
the taste gets richer with plum extraxt. Maturation period depends on your preference. This plum wine has been
matured for 1 year. This is plum wine on the rocks.
