meeting today here we go beautiful mixed vegetable curry with coconut milk you can use any bits you like really I've got potatoes eggplant cauliflower peppers green beans and a few other bits obviously coconut milk some lovely spices is it delicious yep healthy vegetarian and vegan that's gonna do ok let's take a look at the ingredients I'm gonna be using for this one today this start at the back there I've got cilantro or coriander carrots white cabbage cauliflower potatoes eggplant green beans garlic ginger paste bell peppers fresh chili onions a whole garam masala today is cumin seeds and green cardamom here are powders now you could be using a curry powder if you want like one or what he made I'm using separate ones that I always called a big for so these are equal parts of turmeric cumin coriander and chili powder of course we're gonna be using some coconut milk as we're gonna start this off with some oil and we're gonna add some salt I mean that's about it who's gonna do it okay so you're gonna need a pan or pot or something like that I'm using this ones it's nice and wide so you can see what's happening I've got some Whaley in there mixing sunflower oil we're getting in that hot I'm gonna start off by dropping in our whole garam masala okay say I'm using cumin seeds and green cardamom but you could be using you know there's an array of stuff you could be using cinnamon stick dried chili black cardamom fennel seeds list goes on and on some get them on the go for a few seconds they're gonna infuse that oil now didn't mention in the introduction we might actually use some water as well without coconut milk by that's coming on beautifully they're now gonna sing we're gonna go about and our garlic ginger paste encourages your face with a 50/50 mix of garlic and ginger we've got videos to that how to make that I'll put a link at the end product they're all we're doing is adding the hardest edge to lose first then my case that's gonna be my carrots you see I've just cut like that in a kind of flower decorative way so notice each of the reasons that them how you want then I'm gonna put in mine dreaming so we're just gonna go for about three minutes as you can hear and see one a fatty like me can it is coming together really well still very hard to vegetables so let's add in some next stage history so my face will be by this hour potatoes and my egg boxes and again on this very thirty lively heat escape went over three to four minutes stirring often so all of our vegetables are still very hard and what I'm going to do now is I'm going to put some answering cause I want to just help them do what they want them to help it will steam out and gonna cook a bit faster it's got like a glass of water it's not a great deal really that will help it seemed a little the while be here I'm gonna have my Chili's in now I'm putting money in a hollow I'll just taking the ends off chop them if you want I'm gonna put them in just hole so you can fish them out later if we need to I'll get some sort in and again staying on this lively heat stuff up number four minutes again stirring often wonderful so I've only got two more vegetables to go I've got my bell peppers and my white cabbage I'm gonna get the cabbage in now but I'm gonna hold back on the bell peppers now gonna add in our powders like I say the big four use a curry powder if you want that you love or cumin turmeric chilli and coriander equal parts off now this is quite a lot of food that I'm making here and this will probably feed six or eight people so you might want to reduce it down but that is kind of for me you know a very heat teaspoon of each so you can judge that for yourself okay let's get this in now get our spices happening it's steaming beautifully they have that little bit of water let's go for another go for about four or five minutes now just want to make sure that the vegetables are fairly on their way before we introduce the coconut milk because once the coconut meal goes in we're not far off see in a few minute okay looking good I'm gonna get the coconut milk now I'm gonna just put in one can of coconut milk I don't want it really sort of swimming around in coconut wonderful and as that shoe muratcan them spices here coconut milk you can see it turns a beautiful yellow I'm gonna add just a little splash of water I don't forget we still got one vegetable to go our bell peppers but I like the nice and crunchy so I'll put them in and I'm feeling fairly near the end we're gonna let them let the heat down that's we've been going on a really high heat I'm gonna go to a medium depending on how big you've cut your vegetables look at your carrots and potatoes a good indicator but yeah I'm gonna go for about another four or five minutes and then I'll check it if it thickens too much because of the coconut milk can do that just a little dab of water in there little few drops in it we're gonna keep it beautiful okay stir often okay this is we really come together really nicely it's time now Bradley in our final vegetable and like I said I'll just put them in at the end because I like them just to be a bit crunchy so just two more minutes then the very very final stage and we're done okay here we go off goes the heat there check that for salt you might want to add some more salt we're never gonna add in our cilantro or coriander whatever you call that fresh mint also really works and one thing I didn't show you earlier in the setup is a little bit of garam masala powder just like a little finishing powder again
