hey I'm Katie Lee welcome to my kitchen we're making a fun brunch today and starting with a chili Keeley's frittata so I'm gonna slice up some scallions first now chilaquiles is a traditional Mexican dish that's lightly fried corn tortillas usually topped with a green or red salsa and then sometimes they put eggs on top so I made this dish one day that kind of combines everything because I had some stale tortilla chips and these are the way things they say is that what am I trying to pick this is the way that something great is born from stale ingredients so now I'm chopping up some Tomatoes and I like to use a serrated knife when I cook chopped tomatoes because it's just easier to go through the tomato skin so a serrano pepper is a little bit spicier than the jalapeno pepper and I just cut out the membrane and the seeds cuz that's where all the heat is I get rid of those and be sure to wash your hands after you handle the pepper because if you touch your eyes it will burn so into the pan Serrano's scallions and tomatoes and these are gonna just saute until they get soft it'll only take a couple of minutes and the great thing about a frittata is that it is really a way that you can use leftovers you can pretty much chop up anything and put it in a frittata and it'll taste good this frittata takes ten eggs a little trick crack each egg into a smaller dish and then add it so that if you get some shells in there it's not the end of the world there's a little bit of salt because the tortilla chips are salty and they will add more flavor now I have some canned green chilies and these aren't very spicy have a little bit of heat and they have a lot of flavor and tortilla chips these go right in with the eggs and the eggs will kind of soften them up and it's gonna have a great texture when it's cooked and corn about a cup you can cut it right off the cob or use frozen if you don't have any good fresh I'm just going to give this a nice rough chop laundry so this goes and with our eggs mix it all together you see how quick it is to whip this up so the same pan that we sauteed our scallions and tomatoes in that's where our eggs are gonna go to cook so very little cleanup here everything One Bowl one fan now this is gonna go into the oven at only 300 degrees for about 20 minutes usually frittatas are cooked at a higher temperature for less time but I find that when you cook eggs and a lower temperature and slower they actually have a better flavor and they come out a lot fluffier 20 minutes breakfast will be ready I just realized I forgot to put the cheese so on that's the most important part I can't have a frittata without cheese shredded cheddar right on the top melted cheese makes everything that are now into the oven for 20 minutes is done oh this is good we're taught it's hot out of the oven but it can be served at room temperatures so you don't have to do this at the last minute mmm let's eat
