my name is Laneige teller with linnaeus gourmet pickles and today i'm going to show you how to make a chicago-style dill now a chicago-style dill is crisp crunchy and has a real nice mild garlic flavor you always want to cut them in spears as well because of course chicago-style Dill's are famous for being on the Chicago style hot dog so what we want to do is take a glass jar or several and you want to cut them into the spears first trim the ends of the cucumber now this removes a lot of the enzymes that actually can create a mushy pickle so it's very important to trim those ends and then cut your pickle or your cucumber into slices and pack them into the jar it works best if you hold the jar sideways that way you can get them nice and straight and pack as many as you can into the jar so once you've got it packed put one or two cloves of garlic you try to push it down on the side to run make sure that it really meshes with all of the flavors I might even have an extra I really really like garlic and you want to add a little bit of fresh dill okay now for the Bryan you want to take a cup of water which I have in this pan and a cup of vinegar and then mix in a tablespoon of pickling salt and a tablespoon of tickling spices now mix those all together we're not going to boil it or anything you're just going to mix it really well and then take that mixture and pour it over our fresh packed jar just until it's about quarter half an inch to the top so then we're gonna seal it and place it at room temperature kind of in a cool dark place for two or three weeks and then after that move to the fridge and you have your Chicago style dill pickles
