Please explain how to make: fried perch fish

hi welcome to Chris cook for you to tonight I'm going to do a simple dish I'm going to do fried fish I have some ocean perch that I got from my local grocery store here in Virginia got three boxes of it so I just decided to fry it online because another one of my viewers had asked me about how you fry fish now for me fish is very very simple very easy to do when you're frying it here I've mixed together my seasonings for the sake of time the only thing that I'm using is salt pepper garlic powder and pepper Rica that's all that I'm using now if you choose to use a different seasoning on your fish that's fine as well but really that's all you need in order to fry this fish now I have these Phillips already laid out onto a baking sheet and the only thing I'm going to do is to sprinkle them with my seasonings that I have and I already have my oil that is heating up on the other side now you don't need measurements when it comes to anything that you are going to be um frying up and you just want to season just make sure that you season every piece of your meat front and back okay so now that I have those sides the back side of the fish seasoned then I'm just going to turn it over and I'm going to make certain that the front side of my fish is seasoned as well and this is the way you would normally do it you don't need to measure it out just make certain that you've covered every piece of your fish front and back and be lucrative with your seasonings now just a little the foot kind of a healthy amount on it see how I'm doing that okay so this is kind of healthy I'm making certain that every piece of my fish gets covered with my seasoning okay and then I'm going to just rub my seasoned else into my fish now you see how it's taken on that little orange look on color and that strictly comes from the paprika because the salt and the pepper would not give off that one flip and color but that's all that you need to do now I'm going to take this fish and I'm going to put it in a I have a double bag here and I'm old school and it's filled with just plain cornmeal see this is plain cornmeal so I'm going to take my fish I'm going to put it all in my cornmeal if you ask how much cornmeal you would use okay for the amount of fish that you see down here I used about two cups of cornmeal but just use then just make certain that you have enough cornmeal in your bag to cover all of your fish okay now I've shook that up now if I open this bag and it's not eat enough cornmeal on my fish I'm just going to add some more very simple but you see it is enough that's the way it should come out okay that's all you need to make good fish okay so I'm going to meet you at the stove where I already have the cooking wall that is heating up right hang on at the stove and my oil is hot and the trick to find good fish is you want to make sure not only that the oil is hot but that you have enough to cover your fish and if you're covering your fish that means that your color should come out uniform and some people do use yellow cornmeal because they want that golden yellow color I just want a brown color and I want it to be uniform which means that I want every piece of this fish to be covered with the same color I want the same color all over my fish now I'm reaching for let me see if I can get okay now you can fry it and less the oil and I'm using a vegetable oil that would be fine but this is the way that you know you will get all of your fish the same color now this should take maybe about 10 to 12 minutes to fry so I'm going to allow it to fry up and if you notice when I dropped it in you can the oil is frying like a light rain that's the sound that you're looking for to make certain that your oil is hot enough to fry your fish so I'm going to allow this to cook for maybe the next 1012 minutes and when I'm ready to take it out I will come back and show you how it looks now right here I have a paper towel that's on the baking dish and the reason why I have it like that is because I want the fish to drain so what the paper towels will do is it will catch the excess cooking oil that's left in your fish so you always want to once you take it out you want to drain it on some paper cows to make certain that all that oil is picked up so I'll be right back okay now I'm taking my fish out of the grease and look at that fish that fish is golden brown and you don't pick at your fish you allow it to cook so that it does not you know come and loose because sometimes if you go to picking that fish too early it'll start to break on you look at that okay now I have these pieces out and I'm going to go ahead and add some more now here in Virginia um a lot of their side dishes that they use what that fish would be greens and beans because I'm from Chicago we do it a little bit differently my side dish for my fish is spaghetti normally it's forgetty and coleslaw tonight is just going to be spaghetti so I'm going to finish line up all of this fish and what I will do is when I've done I will get back and show you the finished product I'll be right back but that's some great-looking fish okay okay I'm back and I'm down to the last of my fish and I'm taking it out and just putting it down on this baking sheet so you can see how it came out now I first I want to show you the benefit of using the paper towel because if you look let me move this piece see how much grease that actually caught so you want to always use the paper towels in order to drain the grease from your fish down on now look at the color of the fish it's evenly colored all over every side blew this over none of my pieces broke up or anything now I'm going to go ahead slide that over and I'm going to make you a plate so you can see it of what my dinner is here in the back pot I have my spaghetti and I'm doing put just a little bit of ground beef in it okay that's enough for just a little bit more there you go and then I'm going to put down
