masala here from learn to grow I hope that guys are having a wonderful weekend it's another beautiful day here at the Pacific Northwest I'm in zone 8 just hanging out here by the garden now most of you know that I grew a lot of herbs this year and I'm trying to find other ways to utilize the herbs so they don't go to waste so I cried some herbs we use some fresh giving some away but today we're going to infuse raw honey with fresh herbs so we're gonna pick some pineapple sage look it's right behind me this big bush behind me here I love pineapple sage it's most wonderful out here it's also a great herb to plant near the tomatoes from what I've read it enhances the tomatoes flavor similar to what basil does so I'm not sure if it did anything I planted a couple of pineapples say to no tomatoes in the back row here so let's go pick some pineapple sage leaves and we'll head on inside we've got lots of new leaves here this plant is about I think 4 feet tall now it's a beautiful plant also has beautiful red trumpet like flowers that hummingbirds and butterflies love so it's supposed to bloom in the fall so hopefully we'll be seeing those flowers soon infusing honey is a two-step process so far I've got some ginger chocolate mint and vanilla bean this smells so wonderful I can just eat it straight from the jar and it's a healthy treat let's put some herbs in the jar and some honey and I'll show you how to strain them as well make sure you have a clean jar and wash your herbs and dry them thoroughly when you're using fresh herbs you're going to fill up your jar halfway with dried herbs it'll be a quarter of the way because fried herbs tend to expand and I'm gonna just tear them in half because my jar is pretty small you can put the leaves whole if you like tearing the leaves will also release some essential oils we have enough in there we're going to pour some raw honey make sure that all the leads of submerge you want to top it off but a quick stir get some of the air bubbles out of there place your list tightly and make sure to label so you know what kind of herbs you have in there place your jars on a windowsill or another area where it gets at least four to six hours of sunlight the sunlight will help infuse the essential oils of the herbs into the honey during this process you will need to flip the jars over once a day this will take about one to two weeks depending on how strong you want to flavor your honey if you don't have a sunny location you can place these jars in a cupboard for four to six weeks the process will take a little longer in a cupboard without sunlight now we're going to strain one of these infusions because they've been sitting on the windowsill for about two weeks and they smell wonderful before I strain the three on the bottom I just want to show you their friends between the new ones on top if you look at the color change there looks like the ginger vanilla bean and the chocolate mint kind of dyed the honey during the infusion process I don't they look beautiful use a small strainer or cheesecloth if you have any so this is the ginger oh my goodness it smells terrific so I'm just going to pour it in there and I notice that that ginger honey is a little bit more runny than the other ones peak that's because I used fresh ginger and of course the fresh ginger usually has some liquid in it or juice I pour it back in our jar I love honey on my tea so this is going to be perfect for the fall and winter months especially with the medicinal properties of both the honey and the ginger wow this is so delicious tastes just like candy without guilt I'm going to finish licking the bowl I'm going to strain the vanilla bean X smells terrific this is going to be perfect on ice creams or any dessert and you can even use the ginger honey on salad dressings there's so many uses for it or you can leave it just take a teaspoon a week just as a supplement to you stay extra healthy throughout the winter months I'm gonna smell the chocolate mint now mmm it's so refreshing these will make great gifts for the holiday season so I'm going to be making some more giving them away to family and friends thank you so much for watching I hope that you guys are enjoying your first day of fall it's beautiful out here in the Pacific Northwest I'm in zone 8 it's about 74 degrees tomorrow it'll be 82 degrees which is very unusual for us I think we're getting soaked by California Heat I hope that guys have a wonderful day and happy gardening
