hi chef Todd here at Boulder Ridge Country Club today we're going to be making a key lime parfait really nice way to dress up traditional favorites we're going to start with two 14 ounce cans of sweetened condensed milk juice and zest from key limes key limes in case you haven't seen them a lot smaller than regular limes really nice sweet flavor to it we've got one cup of key lime juice and a couple tablespoons of the zest add those together whisk until it's incorporated now you can make these with regular limes as well you know the key lime just gives it a little bit of a different flavor a little more authentic we're gonna take two cups of heavy whipping cream that we've whipped to stiff peak we're going to add about half of it fold together when this is all incorporated we're gonna go ahead and let it chill in the refrigerator for at least a couple hours okay so our key lime mousse is has set up in the refrigerator now we're gonna go ahead and assemble our parfait we're going to start with some of the graham cracker crumbs on bottom and you can do this on a martini glass a wine glass would be a really nice presentation as well but again something clear so you sort of get the the trifle look so then we're gonna do another sprinkle one more layer of mousse and finish it with one last sprinkle on top
