hello it's grant mcnairy with bushel and the basket today we picked a whole bunch of Asian pea pods this is what we pick just in one day we have two rows at our 30 feet long and like I say these have all been cleaned with clipped off the tops and the bottoms and now we're getting ready to blanch them we're going to blanch them in the boiling water for one minute so let's go ahead and put this in and I'll show you the rest of the process and of course we're not going to blanch all these at one time and you'll see they'll start to turn a color a light I mean a dark kind of green and then i'll go ahead and stir it up and you can see how they change colors it's going to take a little time here to do this batch of these batches here because we've got probably four batches to do now if you come over here you'll see we're ready to go with putting ice in the in this water here we've gotten it real cold we're going to put it in the after we blanch that we're going to sit in the cold water for about five minutes give it a chance to cool off then once that's done we're going to drain it we're going to put them on these racks right here and these racks then we'll go in the freezer and then once they've been frozen then we'll go ahead and put them in regular freezer bags so this has been about a minute now this is about all the time you need if you cook these too long like you'll actually them and we don't want to do that and after we do this particular batch of peas we will need to add some more ice because it won't take long to melt that and it needs to be cold and the reason it needs to be cold is because we want to take and shock these in the cold water to stop cooking them and if you do these I think we just bought a 12 ounce bag of these to do some stir fries and it costs or no they were fresh I'm sorry and it costs us three dollars and sixty nine cents for a 12 ounce bag so this is why we do this these are actually cooling down really quick these are actually done as far as the cooling imma leave them in a little bit longer and actually if you took one of these and ate it right now it would have a really good flavor I'm a de facto we're still really crispy and it really gives it a good flavor so if you actually do some of these try a few and you'll really like them we'll go ahead in this few minutes we'll go ahead and put them on the rack we'll come back and show you what we did and then we'll put them in the freezer okay now that we're back we went ahead and drained all the water off it there's still a little bit wet but that's going to be fine and while we were doing this the water got hot and we went ahead and already did another batch and that only took a couple minutes so as soon as that's been put in we can start taking this out what we do is take a strainer the strainer here we strain it out then again put it back on the rack we just have that one more batch so by the time I get this in the freezer all we're going to do now we got a big freezer outside but i'll give you an idea what we would do if you were just inside just go ahead and put it in like that it'll take about four hours 3-4 hours to freeze up and then all you have to do is put it in a regular ziplock freezer bag and that's it one of the important things i should tell you about why you take and you blanch your food your food has enzymes in it and what you want to do is kill these enzymes to help avoid any kind of botulism earning the bacteria that might get you sit so as you can see over here we'll go back to this these got a really nice color to them these was here and now been cooled down and it only took us with that bucket of Asian pea pods it only took us about 10 minutes to get all this done so you know remember one of the reasons you blanch them is to kill the enzymes in it so you don't get sick looking now that we've taken and put these on the ramp we put them in the freezer and here's a bag right here that we did last year and you can see they held up pretty good and so all you would do at this point in time is just go ahead and put it in the freezer and just store it and again these will take and hold on for about six months to 8 months opinion how will you pack it and again just to have fun at it
