chef brandon perry i'm gonna down here at specialty produce and i'm gonna demonstrate uh how to peel a bell pepper and how to peel a tomato without the use of water so i have a map gas right here which reaches a 5000 degree fahrenheit by doing this we have a little grill screen that's available smart final you're able to peel the skin off of the pepper without affecting the flesh without actually roasting it okay the next thing i'm going to demo is uh peeling a tomato the same thing map gas the skin comes right off you want to shock these in ice water real quick after you do this there's a little bit of heat but it doesn't actually cook the tomato or the pepper so the purpose of peeling a pepper or a tomato is if you use them in a saute or something during the cooking process the skin will separate from the actual the actual pepper okay as you can see the flesh isn't cooked so this isn't roasting this is just peeling you
