Please explain how to make huevos rancheros especial recipe | hilah cooking

Hey dudes. I'm Hilah and
today on Hilah Cooking I am making
huevos rancheros especial. This is kind of like a
cross between huevos rancheros and a west
Texas stacked enchilada. It was inspired by a book that
was written by one of the oldest watchers of the Hilah Cooking
Internet cooking show Thomas Fenske. This guy is 187 years old
and he's still writing books. It's amazing. (light music) For these huevos rancheros
I'm making of roasted salsa so I've got some tomatoes
and a jalapeno here. I'm going to pop this under the
broiler for 2 to 5 minutes until the skins start to blister and blacken. (light jazz music) All right, these are broiled.
The peppers are nice and got some color on them. I'm going to put the peppers
in like that into my blender. And then tomatoes
just pull the skin off. And plop those in too. They're super hot so be careful. And if you can't get all
the skin off don't sweat it. Forget it and just put the
whole thing in the blender. Like that. Now I want to add a
clove of garlic, raw. Some salt.
Also raw. And the splash of vinegar
and this is kind of ooh, that might have
been a little much. Just about a tablespoon. That's the key to make
the sauce I don't know, what it is I guess. And then carefully blend it. Be careful when
blending hot things. Okay. Great. Now it's smooth and wonderful. Now we're going to go back to
the stove and I've got half an onion that I
sliced up into strips. We're going to sauté
this in a little bit of oil. Just teaspoon of oil or
so until it's soft and maybe a little bit brown. Take a couple minutes, we're
going to carefully pour the purée and do be careful because
it will splatter so step back and let that simmer for a couple
of minutes while we fry some corn tortillas in a little oil
just until their crispy around the edges but you still want
them to be a little chewy. We're not trying to
make tostadas here. Okay, now to assemble
these I like to do them on individual ovenproof plates. So I put down a
little fried tortilla, got some refried beans here that are warm. Put some of those down. A little bit of our hot sauce. With a little onion
strips and everything. Some cheese. (light jazz) Tortilla on top. So assemble your stacked huevos
rancheros and then put them really low over like 200 degrees
while you fry some eggs and I'm going to do that now and
then we'll stick all together. Alright, so here's my
fried egg going on top of my melted cheese stack here. I garnished it with a
little bit of avocado. And I'm going to do a
little fresh diced onion. Now, if you want to see the

get side yolk porn. Oh that's porn-y right there. Whoa. I think this is pretty good. Described in the
book it was like basically a big
cheesy-saucy-eggy mess and I'd say this qualifies. Mmmmm. Mmmmm. Mmmm! Mmmm!
