in this video i'll be demonstrating how to clean and blanch green beans which is a very common prep technique that you'll do before a secondary cooking like sauteing and so here i have french green beans and you'll notice that you have one fibrous and that has a little brown filament on it that is somewhat fibrous you just want to bundle those together and cut off that fibrous end now some people like to also uh even out the other end and cut those tips off and that's just optional it uh will make all your green beans the same length so if you want that for visual appeal that's fine but it's not necessary then you want to bring a large pot of water to boil and heavily salted just like you would blanching any other green vegetable and you want to make sure that you're using a large enough pot to where when you drop the green beans in or any green vegetable you're blanching that it recovers and comes back to a boil very quickly and the salt not only helps to season your green beans but it also helps to keep the chlorophyll molecule stable during the blanching process which will keep your greens nice and well green so after you've boiled for about two minutes until they've tendered a little bit you're going to drop it into an ice water bath to shock it and that'll help set the color and also rapidly cool down the green beans so they don't overcook on you and you can get give a little test make sure that it's the proper consistency again you don't want to totally cook these through you still want some crunch to them because you will be doing a secondary cooking process and then just go back and simply strain off this uh the ice that floats to the top and you can add a little bit of water if you want to then just drain it through a strainer just like this to remove the water completely and then from this point you would just basically place it on a paper towel to dry and then use these in a secondary cooking process like frying or sauteing or whatever you like a high temperature roasting works good too for related videos and techniques check out this episode's show notes at stellacloney.com kp18
