hi there today we are going to do a super quick game dish what we're going to do we're going to make some lovely spicy venison meatballs we're going to serve it with a tomato sauce salad cream and paprika it's a real real quick and simple dish to do and we're going to give that Essex boy Jamie Oliver a run for his money try and do this in 15 minutes so I'll just give you a quick spin around there before we start cooking for the source alone I've got one small onion chopped 1 garlic clove chopped 1 chilly chopped few basil leaves for good quality tomatoes and then it goes my egg and I'll see some salt and pepper and for the meatballs we've got 300 grams fantastic dice venison I'm going to put some parsley through it bind it with an egg put some paprika into the mince and in my bowl there I've got 1 onion that I've sweated down and a bit of color so first thing we're gonna do get this Rocking so I want to do this in QuickTime to prove that you can do a good meal you know in not many minutes because I'm just gonna put a little bit of butter in my pan with a little bit of olive oil first I mean you do get those onions and garlic sweating down for the base for our sauce and while they're just gently taking on color hopefully we make them meatballs so like I said into my bowl one nice sweated onion that's cooled by 300 grams of mince a nice handful of freshly chopped parsley you know my onions go in there so we're doing this in real time this will all come together and be fantastic parsley goes in hot smoke so the meatballs will not only be spicy but have a nice smoke tinge to them as well so let's pinch of molten sea salt in a bit more in and we get plenty of fresh cracked and basically just a case of just getting your hands in it isn't it a good mix and coorporate in all of those lovely ingredients my onions my garlic stuck on a bit of color so in with that small - the tomatoes which is half a big tin which is 227 grams I'll give that a stir and when it comes up to heat I'm just gonna let that gently tick over the base of our sauce so I'm also gonna season my salsa a little bit of salt just let that gently tick away so to the meatballs it's moving with basil meatball mix then we're gonna do take some meat out shape it in our hands a little squeeze together try and get as many as we can because we want this to cook quickly don't see trying to cook this in real time to prove that you can do a healthy meal but not only a healthy meal a game meat dish in quick time so just making nice little balls of these clear my sauce ticking away see I mean can we get out of here I mean you might want to make them smaller I think that I mean if you think your mix is too wet you know you can always add a few breadcrumbs but I'm doing this live I'm just going to go for it so our meatballs just some plain flour just dredge them around your hands get a nice shape they should all turn out like that put them on a plate over there let's do another this will that help them caramelize get a nice crispy edge on get messy in the process over to there cuz that's cooking away nicely my pan on the back so add a bit of color to these meatballs so a real generous help in the butter good glug of olive oil so you can see them it's about that butcher as well with that oil so what I'm gonna do is gently put my meatballs in just going to gently cook them through this has been about ten minutes so far so we aren't doing too bad you like that a bit of color on them start and cooking and then when they're nicely caramelized and partly cooked all the way through we should put them into our source air just continue to warm them up they are burning nicely and they smell delicious oh there's my sauce picking up something to do with that then just gonna tear some into that sauce obviously with basil you never cut it not with a knife especially always tear it and I'll just do that in such sauce nice fresh sauce especially you know using fresh food source in that time now what I've done is put this pan back on the back heat because I want to get some more heat into it meatballs as they look place them in gently and then gently just heat them up heat them through five minutes might get more in there get in there look at that mince venison turns into that beautiful so those meatballs then they cooked just turn the heat off fantastic what a beautiful pot of food now this is one of those dishes which benefits from just taking it straight to the table it's going to plonk some sour cream on the top and then it's going to rip little bit more basil into the sauce freshen it up and then just be fancy I think we'll just just the salad cream and there you have and that's took 20 minutes my hot spicy venison meatballs with sour cream and paprika now just take that to the table cook some nice linguine to go with it and plunk yourself a couple of bits on you know me he's gonna dive straight in one of those lovely meatballs it's in that sauce come here get out sour cream on some basil oh man you don't need me to tell you how good that is mmm give this a go will you stalkers out there over the pond as well twenty minutes you can have yourself not a plate of food a pot of food like that thanks for watching
