hi I'm Anthony Pascarella and I'm gino papparella we are the Passarella brothers today we will be making New Jersey crab chowder now typically like to go on vacation take our time get some crabs early in the morning and have a little fun but we're gonna do a little differently today we're gonna take a field trip go buy some crabs locally let's go we stopped by parts market over into Providence it's a nice small business to do a lot of meats great place it's a really cool a really cool they even had a little produce section so we were buying craps like I said we only actually go down the shore when I get the blue claws so we ended up with the soft shells which are just those do it a little more delicate to work with but we're gonna get the same great flavor sawed-off with and garlic you're gonna taste so good yes you smile smile smile so cute lift this guy over this the mail yeah ma'am ma'am now you take the carrot peel a skirt back I feel the whole top right off there easier because they're soft helps the regular little claws are not diseased but I think they taste better growing up going down the shore it was a whole lot more graphic this isn't so nice and easy to watch because they were live so we bring home live and do this exact process while they were like grabbing a table you're ripping their back off so while we keep cleaning these you know game starts saute the vegetables on your celery carrots we chopped them already here's this nifty little trick bay leaves pack some flavor to the food not so nice to eat an absolute pain in the neck to pull out of you from after it's cooked so add some coffee filters bay leaves in there some butcher twine everyone should have in their kitchen for everything tie your hands up if you want to and work with no hands it's lost it we still get the flavor we want it was just pulled right out when we're done bear it in there outside for the handle good these guys are very predominant from excision North Atlantic from Maryland says buffet Delaware and New Jersey obviously where we're from all we have two main mostly in our region but since Hurricane sandy all the beds have been disrupted so they're not as abundant the past few years so if you're out there catching fast yourself bring home their family please take the male's only that's a male home on vanity left that's a male okay the female has a gigantic skirt like that if you catch a Phoenix female no matter how tempting how big they are how heavy they beautiful they look we put the females back okay no raping no pillaging put the females back so we can make more of these so we can eat them it's a lesson in life with the females back you're good I'm gonna take each one of these shortly now you don't need as many as we have here we're doing this big gigantic batch here because don't sell it tomorrow so we'll leave a week most of it we're gonna we're gonna have some smaller special crab chowder it would need half as many I'd say ten make a good powder you want to make sure you get them all break them all up there you have the sauce that's in there and the crushed tomatoes adds flavor adds texture it really makes it look nice little little white vinegar for me the way we were taught as kids do a purpose and the market really took good care of these guys before we got them we're used to going to death to get them ourselves down in wild weather Cape May bring home these dirty sandy crabs and take a while to work on got some cheesecloth here usually when we cook them after they're ready we pull them out after this short day to take a little meat out of it but that's also a pretty pretty big job because you're looking for a little piece of claws which you're gonna end up in your mouth anyway doesn't matter and all these little bits of fragments whoa also we're gonna lay them in the cheesecloth here similar to the bay leaf I did where we just pull the filter out to pull these guys out lay these guys in here we they're connected your whether they were friends they were like put upitis just like me and yeah what this one's this one other this one's me with my other one I lost another mystic an arm poeple take care of you thanks buddy we're gonna wrap this like a mummy I also come from the school of you can't tie a knot tie a lot so just keep making knots it's okay my son's a Boy Scout I'm sure you all have been done with this already good untie it see how good you are you can untie that all right we're gonna drop this right in just away this let that steam a bit all right put you out there don't know what wine a little white wine for this shot why not see if that was up here nice come on throw it in there nice man Wow smells great all right so once it doesn't smell like that like why anymore it just smells really really good because would be a Thomas manliness you get out of the way it / - eat a little bit go ahead Zeus in there I'm going to let that come to a boil and then we'll pull the grabs out and get all the meat out they leave that first there's some in there watch your back took your son's color you cook this squeeze all the good we don't want that it was skin impurities ball and once they cool just a little bit open up all the crabs take the meat out put the meat back in put the ingredients in and we have crab chowder Oh get up get all these guys out here get either unwrapped kinked on here you just got it open it away look across while things so this pretty easy especially on the soft shell open that up but all the meat just comes right out little athlete squeeze it out of the legs and you can actually get some whole pieces out nice big chunks our chef that was helping us with the proper Leon wants to make sure we save them all these he's gonna eat them now again this is really tedious a lot of work on these little tiny creatures you get this little bit of meat out but it's so worth it they're gonna love it if you let them cool down that being a little family help you they think they're having fun and you have some cheap slave labor Ragan out a little bit of cayenne pepper put a crushed red pepper the black pepper garlic now most people associate any crab dish with the that crab looks like we'll have a season in one of those day it's good but you don't have to put on anything that if these crab you're gonna like this you don't have potatoes in though but definitely gonna be a chat without potatoes would be soup I guess hold against the side of the pot just kind of drop it in you wash yourself how's it looking also optional this kind of makes it convenient just love the frozen peas in many of those so fresh peas are great I guess canopies are okay frozen peas always the best as they stay nice give it a taste buddy get some crab in there I doubt we'll see it for everybody else that's delicious there you have it New Jersey crab chowder I just drew a blank let's do that again all right quiet on the set and there you have it New Jersey crab cabin it's so good I can't wait to have some I really miss it I miss you take three take four there you have it New Jersey crab chatter not as hard as it looks it just requires a little more time and patience it's so good you're gonna love it enjoy this summer dish Thanks have a good one bye
