hey guys welcome back to rinse cookbook today we're gonna be making number ikaw aka chili jam or roasted chili jam there are many ways to eat this you could eat it with rice you could put it in your Tom Kha soup or tom yum soup and you can eat it with many other Thai dishes so this means that this is a very important Thai ingredient ingredients some presume they couldn't prove to you the main aha we're going to put the measurement in the description box below I thought I was so into eunuch long description Acuff let's get started no madam dunk Elena huh you want to start out by cleaning or dry serrano peppers then remove the seeds and the stems cut them into small pieces in a pan on medium heat you're going to stir fry your chopped garlic and shallots for about five to ten minutes with no oil or you cook them at 350 degrees Fahrenheit in an oven for about 15 to 20 minutes then put them aside next heat your shrimp paste aka got beat for a short period of time you want to do this to bring out the flavors of the compete then put it aside for now in a separate pan you're going to fry your dry shrimp so heat your oil first with medium heat then put your shrimp after and then take the shrimp out next you want to fry your dried peppers unload a medium heat you want to be careful with these because they can burn easily so it should take about 40 seconds or less for you to fry them then take them out next you're going to start grinding a lot of things you can use a coffee grinder to do this starting with the dry shrimp and the peppers and in a food processor you're going to grind the fried garlic and the shallots and then add in the shrimp paste if it's too difficult for you to grind these you could add a little bit of oil then add in the peppers if you have just ground grind everything together in a different pan you want to add in your paste not including the ground shrimp and you want to also add in your palm sugar turn the heat to low and mix everything together then you want to add some fish sauce if you want your jam to be sweeter you could definitely add in some sugar and if you wanted to be saltier you could add in some salt then add in your ground shrimp and mix everything together add some tamarind paste and the oil in which we fry the Chili Peppers and when the oil starts to boil turn the heat off you want to let it cool down completely before storing it in a container and you could keep it in your fridge for about a month and if you've made something from our recipe don't forget to share a photo of it on Facebook Instagram or Twitter with hashtag riddens cookbook Thanks so I hope you guys like this video please give this video a thumbs up subscribe follow me on my facebook Instagram Twitter and Google+ and stay tuned for new videos every week and until next time guys bye you
