Please explain how to prepare filet mignon - easy recipe with red wine!!

its Tatyana from Tatiana's everyday food and today I'm gonna be showing you guys how to make the best restaurant style steaks at home I've been wanting to make this video recipe for a really long time and I always somehow get sidetracked so I'm really excited to making it today my husband and I love steaks and we have steaks at least once every week just a nice time to sit down relax have a fancy restaurant style dinner at home I'm gonna try to give you guys as many tips and pointers as I can so you guys can make a really great dish at home I'm also gonna be making some roasted carrots and asparagus in the oven now I have a video recipe already up it's titled oven roasted sweet potatoes but the recipe and the seasoning can really be used just for about any vegetable I love carrots beets sweet potatoes zucchini bell peppers anything that you want to combine and serve this dish with when I'm making a steak dinner I make my steaks last so I've season my vegetables I'm gonna pop them in the oven and they're gonna start baking while we're working on our steaks today we're gonna be using filet mignon steaks now this is my first choice of meat I love this meat because it's really tender its juicy it just melts in your mouth and you don't need to marinate it with anything we're just gonna be using some salt and black pepper to season the steaks with now my second choice of meats would be a dry-aged rib eye steak and I love ribeye steak especially with their dry aged because dry aging really gives the meat like this intense flavor and it makes the fat really really soft so once you sear off a dry aged steak the fat will just literally melt in your mouth and you can use the exact same seasoning just some salt some black pepper and it makes for a perfect steak you want to make sure to take your meat out at least 30 minutes before you're gonna cook it just to allow the meat temperature to rise up to room temperature and this way it's gonna cook very even once it's in the fan so we're gonna season it with a little bit of salt and I didn't think a little bit it's generous you just want to season it evenly on all sides let's take over you can see I've handed trim these steaks so I've removed a lot of that excess fat and just the filmy white part of the meat from the outside and we're gonna see it with a little bit of ground black pepper and I always use fresh pepper because it's so aromatic you can't compare to something that's already prepackaged we're gonna come over to the stovetop and we're gonna heat a small pan over high heat now I'm using a small pan because it's gonna contain the heat a lot better and it's gonna cook my steak evenly I've added a little bit of oil in there and we want to heat this into the oil is really really hot let's go ahead and add our steaks now once our steaks hit the pan you don't want to move them around better than this and let the steaks cook so don't touch your knees so what the steaks have been cooking for a few minutes you want to turn them over and I'll return my steak one time this is because the meat will cook more evenly like that you can see that nice rich color on that on the outside that's just what we need now before I pop them in the oven and I have my oven preheated to 375 degrees I'm gonna add a splash of wine and a little bit of Worcestershire sauce just gonna add a little bit of flavor so now I'm gonna place my steaks into the oven and I haven't preheated to 375 degrees and I'm gonna cook my steaks to a medium rare and that's how I like my steaks I'm gonna keep in the oven for another 8 to 10 minutes if you want your steaks more well-done cook them for about 15 minutes in the oven and I wouldn't recommend cooking mistakes anything over medium just simply because the meat isn't becomes really really tough and not very flavorful so once they take your steak out of the oven just go ahead and turn it over and we're gonna let the meat rest for about five to seven minutes you want to just rillette the juices redistribute themselves so you have a really nice and juicy steak meanwhile we're gonna prepare a really great steak sauce I'm gonna be using a sauce dispenser bottle but if you don't have one you can always just whisk the sauce together in this small bowl we're gonna use equal parts of Worcestershire a teriyaki glaze and the tamari sauce you can also use soy sauce if you don't have tomorrow it's gonna add these inner model just shake him up put my cap back on and just give this a quick shake and we're ready to serve and now we're ready to plate so I'm gonna place a few of my roasted vegetables on my plate and I love these because they taste so so good and then doesn't make the meal too heavy add my steak and we're gonna top it off with our homemade steak sauce now we get a joiner stick so let's go ahead and cut it open and you'll see the beautiful meat on the inside that's perfect so this is a medium done steak and you can see the juices are still on the inside there and now we get to enjoy a delicious steak dinner and I love the extra pop of color that the carrots and the asparagus gives it's just the right amount of color for the plate yeah let's take a bite of our steak here this is such a great cut of meat it just literally melts in your mouth it's so flavorful and it has a that good sear on it and then it gives it this nice
