this is Helen and welcome to modern pepper so today we will be making a classic Korean dessert called popping soon popping suit is a shaved ice dessert and it is loaded with so many different kinds of fixings so today I'm going to show you how to make popping so at home and you really don't need to go buy one of those gigantic eyes shaving machines now if you have one that's great too because I'm gonna also share with you a way to enhance your shaved ice by adding a few ingredients here and there I think for me those ice shaving machines the smaller ones where you have to use your hand to crank it for me from my experience by the time I'm done cranking and shaving the ice using the hand crank the ice shaving is already like turned into liquid and then of course you could make an investment and buy those sort of industrial-grade ice shaving machines but for me for my household it really doesn't make sense because it does take up a lot of room and it is super expensive so today I'm going to show you how to make the shaved ice at home without having to use one of those by shaving machines so all you need is a blender to make the ice shaving that you could do at home and it's a secret of mine that is super super easy so I'm super excited to share with you so you're probably wondering what is poppin sauce and poppin soo is basically a shaved ice dessert served with a variety of fixings so the most famous one or the most Oh G or original one is the poppin zoo and pot means beans and the beans that are used for this poppin sue are sweetened slowly stewed red beans it is super delicious so these sweet beans are popular sweet fillings for Korean pastries and it is commonly used in other dessert dishes as well Ping's who means shaved ice dessert basically that's it so poppin soo is the original one that everyone's familiar with and happy to back then long time ago was not something that everyone made at home it was typically made at your local cafes or bakeries because in back then not many people had the luxury of having freezers to have their own ice at home so it would be a big block of ice and you would literally hand shave it using a hand tool and then you would top it off with the sweetened beans with other fixings and fruits poppin su has come a long way now so if you go to Korea you will find most bakeries or cafes that sell all different variations of this things our dish so poppin su is one and then they would probably have at least a handful of different variations of this things who deserve today I'm going to show you how to make four different things use one is poppin so using the sweet stewed beans and the second ping soup will be green tea ice cream with additional fixings third one is my favorite because we're going to turn it into coffee beans ooh and fourth one is a very refreshing variation and that it's just sorbet and just fresh fruit I mean the variations of the toppings that you could create to make your own personalized bingsu is just limitless so so I hope you're excited cuz I am super excited to share this recipe with you because it is insanely so easy and you don't need a shaving machine to make this so now to make your ice shaving like I said it earlier you don't need one of those ice shaving machines and if you have one you're super lucky and I'm jealous that you have one now if you enhance the taste of my ice shaving by adding a few ingredients so this recipe is super easy all you need is a really good blender now I love Vitamix --is it's my personal preference it is quite expensive but it's one of those kitchen investments that I have where I use it for so many things I use this also to make Korean pinda duck where you have to puree the Korean mung beans and also to make you know frozen cocktails and soups and to blend other ingredients for a variety of dishes so I've had this for years I think I bought this maybe close to 10 years ago it still worked so well so if you are looking for a blender I highly would recommend getting a Vitamix it's been really great to me and I've never had any problems you could also purchase Vitamix that have been certified refurbished and those tend to be a little bit cheaper in price and I've had a lot of girlfriends that bought refurbished Vitamix is and they're very happy with it so I will have links for the Vitamix along with all the kitchen gadgets and the ingredients that I'll be using today in the description box below or you could go to my blog for this recipe of modern pepper com where I would have a detailed list of the ingredients and recipe instructions and of course links for you to conveniently order any of the ingredients and the kitchen gadgets that we're using today so let's get started on making our ice shaving liquid so you need 1/2 a cup of water 1/2 a cup of milk and now and you could all substitute whole milk with rice milk almond milk or whatever milk of your choice or if you don't want to use milk don't use it just replace it with water and then I'm going to add a scoop of vanilla ice cream make sure to remove the small cover put the lid on and make sure to use a kitchen towel to just cover it so it doesn't splash everywhere and make a complete mess I mean how annoying is that when that happens I absolutely hate it and I get so mad at myself for making a complete mess because I hate having to do extra clean up in the kitchen right who does so it's on low setting and we're just gonna turn it up for about good 10 to 15 seconds alright so it's been about 10 to 15 seconds and what we're gonna do next is if this is about a cup of ice cubes and we're just gonna slowly add them in here with the blender turned on so turn the blender on again at low setting so we added the ice cubes one by one and we let that run for about 15 to 20 seconds and the last ingredients to add is some vanilla extract I like to add a little bit of vanilla extract just to enhance the taste of our ice shaving a quarter teaspoon and not any more than that because vanilla extract is super strong so we're just gonna put it in here and then this time we're gonna set the blender at super high and blend it for another ten seconds so that's it okay and it's done so what we're gonna do next is to pour all the liquid into a ziploc bag pour it in here there we go and then we're gonna take it out hold it upright like this and then bring your fingertips down here with both hands and then fold it over like so we're gonna make sure we take out most of the air and then and then grab a flat tray and then I want you to take this and just lay flat like so about two-thirds of the way okay and then we're just gonna fold it over and this is gonna go in your freezer you know for my freezer it took me thirty minutes to freeze this but if you happen to have one of those super industrial grade freezers it might take fifteen minutes depends if your freezers been kind of old and kind of wonky it might take an hour so we just want to make sure we're freeze this and the reason why we're laying it down it so that we're gonna freeze it evenly now we don't want to freeze this to a point where it becomes super hard we just want to make sure that it's no longer in liquid form so just keep it in the freezer keep an eye on it now while our ice shaving liquid is in the freezer point where you could still squish it and it's like slushy basically we're just turning it into slush and you should be able to sort of break it even more with your hands and using a rolling pin just press it down a little bit more just so that the slush enos is consistent like so and your ice shaving is ready for your ping soo now hold on you know we're all busy and sometimes we lose track of time you might end up having a solid piece like this so then what you need to do is take a mallet using the smooth part only not the pointy part just pound on it a little bit and don't be overly aggressive that you're gonna rip the ziplock bag because that's the last one to do and it turn it over to the other side and then do the same thing and now let this just hang out on your cutting board for good three to four minutes and I'll get soft and then you could just press it down with the rolling pin again so that it will become like this this is still frozen as you can see it's upright but if you touch it it's look you hear that sound that's the sound of happiness and slushy ping soo that we're gonna have very very soon together so that's the consistency that we're looking for okay now I'm getting super excited because now we could start building our puffing soo with all the fixings that I completely love so now we're ready to dress our pictures isn't this pretty grab a ball of your choice and this is our pillowy slush snow that we made that's gonna be so good and instead of just pouring it from the top make sure the top is super sealed and then turn it to the side like this grab a pair of scissors and cut out the corner like this and then what we're gonna do is just pour it in here like that mmm look at oh that looks good look at that okay so you should always taste as you're cooking so let's have a quick taste okay I almost got popsicle brain freeze okay the shaving is watery but slightly creamy from the milk we added earlier and the vanilla ice cream and then it has this like subtle taste of vanilla extract which just makes this in itself super good I mean you could just eat it like this or just put some chocolate syrup on it and there you go so the first one we're gonna make is the puppies ooh there are a few ingredients that I just want to go over with you so this is sweetened stewed red beans that's called pot that we're gonna add to this which is why it's called puffing - and it comes in a can and I will have links for this on the description box below and on my website and you know for the popping screen you don't really use a whole lot of this maybe two or three tablespoons at most so what I like to do is put them into Ziploc bags and put them in the freezer so that maybe a couple days later or a week later when my kids bug me for dessert I could just take this out and let it come to room temperature and then use it again and then the other ingredient that we're gonna use today is called Mitsuko if you have not seen last week's video on miso federally Sagat is basically roasted Multi greens shake powder and this is a classic old-school protein shake powder that's been around for ages in Korean culture this is super delicious but we're gonna add this to our fixing as well now the other item that I would recommend that you get is topside bean soup duck it's basically sweet white rice turned into Korean rice pasta and this one is specific to popping - so it looks like this it's very small it's basically mochi so you know if you've had Japanese mochi is basically that but they just make it really small and it's really good to have with ice cream or any desserts of your choice and you should taste it too hmm it's chewy slightly sweet but not too sweet so we're gonna use this too now as I mentioned earlier all the ingredients that I'm using I will have links for you to purchase them online so they could have them completely shipped to here so make sure to go to my blog for this recipe at mater pepper calm as well as checking out the description box below where I will also have links for all this as well so using a fine mesh strainer I'm gonna add a little bit of the miso soup garlic powder and just shake it on top like so let it snow and fall on top now you could add any ice cream of your choice I'm gonna add a big scoop of reppin ice cream I'm gonna add our sweetened red beans like so on each side oh my goodness this looks so YUM on each side and then we're just gonna add some berries all around and you just could add whatever fruit you fancy strawberries ooh look how good that looks already and some melon and then we're gonna take our chopped side duck and then just place them put it around like so like that our final touch I'm gonna take some chocolate syrup and then we're just gonna drizzle oh my goodness look how pretty that looks look how pretty this looks oh my goodness and it's so simple to make you can just make this at home whatever you need and you don't need to go to a cafe I mean if you live close to one of those curry cafes and bakeries that make this then you're super lucky but I don't I have to drive like 30 minutes to get to the nearest Korean cafe to have one of these so you can make this at home and enjoy it with your family of friends all right now on to our second one our green tea topping one and so you need to get some green tea powder or matcha powder and then just put it in a tea bag strainer and then just shake it on top like that and we're just gonna let some of the ice shaving be covered with matcha powder on top look how pretty that looks already here's a big scoop of green tea ice cream that I'm just gonna put on top and then some brownie pieces a few slices of fresh strawberries like so and then you could add the chopped sides up so I've been to some cafes where they add cereal as one of the toppings so you could even add your favorite cereal of your choice so I think like rice krispie treats would be great with this you could have slivers of almond I think that would go well with this and then we're just gonna take this and just let us know a little bit more ooh so pretty and then some of our chocolate syrup just a little bit ooh look at that YUM and then I have some of these green tea Pocky sticks just for fun maybe two three and then your favorite person get the pokey sticks okay and your least favorite person they could have the leftover slush on the bottom I can't wait to taste this look how pretty this looks green tea ice cream ping soo with cubes of brownie and some fresh strawberries and syrup super yum it's super easy to make so now on to our third ping soo so this is my favorite in that it has coffee and you know I always need a little bit of sugar and caffeine to sustain my energy throughout the day before we get started on dressing our coffee bean soup I wanted to cook a goal over two items with you so this is called Madame Chiang and this is one of those like really really old-school Korean snack and I just want to show you it looks like this and it has a little bit of peanut and sugar coating and basically I just want to warn everybody this is really highly addictive this tastes like fried donuts yes it's crunchy and I'm just gonna have a bite just to make sure it's good it just has the perfect amount of sweetness too not too sweet and then the peanut taste with the fried taste of this dough it is super good so we're gonna use this as our topping this is Korean instant coffee packets it comes in a big box it comes in these little packets and it has instant coffee grinds sugar and cream or powder in here it's a very Korean coffee they sometimes call it table on coffee and topping refers to cafes that were around in the olden days where they used to deliver hot coffee table on coffee generally refers to that is sweet and light but it's not overwhelmingly sweet or overwhelmingly too creamy you're gonna need a packet of this because we're gonna use this as our topping and we're gonna add a little bit of coffee to our bowl of slushy ice now you can use this Korean instant coffee here and if you do use it just only at half of the water that's suggested on this direction make sure it is ice-cold or you could add some really strong black coffee or if you have an espresso machine at a shot of espresso again make sure it is ice-cold because the last thing you want to do is add warm liquid to our shaved slush here and if you haven't watched my video on how to make single cup iced or hot coffee please check it out I use the arrow press to make a single cup of coffee that is super delicious it's bold and you don't need to fire up your big coffee machine because if you just really need one single cup of coffee this is the gadget that I use you could adjust the strength according to your preference so make sure to check out that video I have a little bit of the Korean instant coffee and this is very very cold and I'm just gonna pour it on top like so and then we're gonna add a huge scoop of coffee ice cream with espresso beans and then we're gonna take a few pieces of this and just put it around these guys will kind of get soggy as it kind of flushes with the liquid here and it's so good it is so good and then what I like to do is take one of these packets and I like to just sprinkle a little bit of the feet instant coffee with the creamer and sugar on top like that oh look how pretty that looks and then I'm gonna throw in some espresso beans on top just so that you get that nice surprise crunchy bite of caffeine and then we're gonna top it with some chocolate syrup just a little bit look at that that looks so yummy this looks so young look at that coffee ice cream with shaved slush vanilla and this is gonna be so young so now on to our fourth thing soon so I'd like to have it this way when I just want a really really clean refreshing taste so I'm gonna put a scoop of mango sorbet and a scoop of raspberry sorbet I mean the other three that we made we added loads of other sweets and toppings to it this I just like it with my sorbet like so and I'll just add maybe a slice of apple like that so this is my go-to super simple super refreshing sorbet ping su you should give this a try cuz this is super easy look at all this things ooh oh my god which one do I eat first so now it's time to taste I mean I think I outdid myself today I'm gonna have four different kinds of ping su for my afternoon dessert I guess and I'm gonna eat it all before my children come home from school so let's start with the first one this is the popping - with the Korean these sweet beans so I'm just gonna try to get every little piece of the fixings that we added oh boy oh my god I'm just like drooling in my mouth before I even tasted okay let's have a taste the slush instantly cools down my mouth and then the Korean sweet beans it's really delicious if never tried it you have to go try this it doesn't even taste anything like these it just tastes very creamy and sweet that's it it doesn't have that bean taste that you would normally think of and then the fruit is so good in the ice cream I mean who doesn't like ice cream right our slush is extra delicious because we added milk and we added a little bit of that vanilla ice cream and a little bit of that vanilla extract so nothing tastes watery and some pings of places they put so much shaved ice that five minutes later you're just eating like water with the rest of the fixings which is okay too so and then the green tea things too with a little bit of ice cream and some brownie bites here we go mmm hold on my mouth is exploding with the taste of the bachi powder I love the smell and the taste of green tea and matcha powder just takes it to another level and then of course the sweetness and the creaminess from the green tea ice cream and then the brownie bites that we added earlier with some strawberries and the slushy ice all together it's a perfect combination super young now we're gonna move on to our coffee beans ooh so before I even have a taste I'm gonna just take one of our bottoms hung crackers and this is basically crunchy fried donut taste it is so good I'm who's not gonna like that right mmm for now I'm gonna make myself a spoonful of it so the slush and the ice cream and a little bit of that espresso bean oh my god it's so good oh my just aw I wish I could share with you and I just got a bite of the espresso beans so the aroma of the espresso beans are exploding in my mouth with the slushy ice that's so refreshing but it's not watery and it has a slightly creamy taste and then of course coffee ice cream I mean who doesn't like coffee ice cream oh this is so good okay I think I have to skip dinner today because I'm gonna eat all four of these onto this simple sorbet one this is my go-to when I want being sue for the refreshing taste of the slushy ice without all the extra sweet fixings I mean these are these guys are dynamite and so delicious too but sometimes I do enjoy desserts that are more on the less sweet side and more on the refreshing side so this is going to be super yum - so I'm gonna get a little bit of the raspberry sorbet and the mango sorbet with our slush here we go hmm oh that's good you know how we all like the taste of sorbet before it's like light and refreshing and then really little sweet taste imagine that taste in your mouth with this ice slush but together it just makes it even more light tasting in your mouth and super refreshing I don't know I don't know which one I like the most I mean they're all so good and they're so unique in its own way but I think what makes pings ooh so divine and so delicious and so refreshing is ice slush the ice slush really really is a refreshing dessert to have without the extra-heavy taste that you would just get if you were to just have a milkshake alone or just ice cream sundae alone and I just want to clarify I love ice cream sundaes and I love milkshakes too but if you are looking for a dessert that is bit less heavy and less sugary I think ping su is a great dessert to trial and I know I know I hear you so some of you are saying Helen you're supposed to use condensed milk when you make pings ooh yes often times ping su is made using condensed milk I like to err on the side of consuming less calories and condensed milk is super high in calorie and I know the rest of the fixings that we added to are really high in calories so that's what I decided to cut out the condensed milk because I'm already loading my pinky with lots of other calories and you'll also notice too when you go to Korea where almost every cafe and bakeries specialize in their own ping su and you'll notice that often times they do not use condensed milk as one of their toppings and some do so again the choices of toppings is really up to you and it's limitless so if you want to use condensed milk please just so but the reason why I
