I'm going to show you how to blanch vegetables which is a very useful technique what you do is just barely cook the vegetables you put them in boiling water you know like your little hot tub and then they go to the spa and go in the ice plunge and that halts the cooking process so they're left in this very sort of nice bright tender form easy to digest easy to reuse so I like to blanch vegetables and then store them in the refrigerator you can pull them out and put them in salads or put them in soups or just eat them plain as a snack they're really cool in a lunchbox you can put them there with something to dip in and like coconut peanut sauce which we have a video for or lemon tahini sauce something like that so I'm going to start by putting a little salt in my boiling water which brings the temperature up and actually the salt brings the brightness out and the vegetables too and you want to start with the vegetable that takes the longest so I'm going to start with the cauliflower and then I'm going to put the carrots in and then the broccoli and they're in there just taking a little bath it doesn't take very long just about 30 seconds you're just watching for the color the brightness of the vegetables to kind of come up and then you're gonna take this and run it through the colander in the sink I'm gonna need to sink okay just take a second no what do you know what no you can't do that Jamie's making a luxury shower I need to get this done I know but stuff from your nose comes out goes in the sink and that's and I'm gonna use the sink for vegetables right now so no okay yeah in a second I'll be done - it doesn't take it takes it's really fast it doesn't take very long at all so just hang on and so here we go these look great and I'll put them through the colander here this is fast it's so easy and you can do a whole bunch of them and just keep them in your refrigerator and then quick quick quick they go on the ice plunge hello there so I'm gonna be in there and that's it that's the whole thing that I'll are you gonna be in there that's that's it and this is what they look like that
