hi I'm Rachel from the stay at home chef comm today I'm going to be teaching you how to make an Ethiopian flatbread called injera it's made using tests flour test is the smallest screen in the world fun fact and is super nutritious it has a lot of fiber and protein and iron in it and it's a great nutritional source I found it from Bob's Red Mill I haven't actually seen it anywhere else but Bob's Red Mill is pretty much everywhere so you should be able to find some test water in your store or order it off of Amazon now it's an overnight thing you think about it for a minute you could make it right away but you want to get a nice sourdough type flavor so I just have taken one and a half cups of the test flour I'm gonna stir in 2 cups of water here just stir it together we're gonna cover this and let it sit at least overnight and you can let it sit for up to 3 days so we'll check back in with that stuff alright it's been 24 hours so we can check out our Charter and take a look and now we're gonna before we cook it we're going to add in 1/4 teaspoon of salt and we'll just stir that in now this is kind of like a crepe dough so we have a heavy skillet sitting here over medium heat it's nice and hot and then a little bit of coconut milk or you could use olive oil and even vegetable oil I like to keep it a little bit healthier and actually whites a little bit of flavor that the coconut brings to it so now after we get this the bottle of oil you're burning like a crepe this is a little thick of a crepe and now a piece of foil or can you believe and we'll just keep cooking it until that spot in the middle gets start you'll know it's done now is in JIRA you're not going to flip it like you do a crate so keeping that moisture in is important for cooking the top of it in Ethiopia the injera is served on the bottom of the plate and it's topped with curry or stew or whatever it is that you're eating and you use it up like a utensil to scoop it up as you go along in the dish so it's really fun for kids it can be a little bit messy but it's super fun that kids love it it's a fun way to eat it or you can just roll it up and serve it on this side either way it's fantastic so we're done here I'll just finish off my batter here and make some more now you know how to make Ethiopian and jerry' flatbread hopefully your family enjoys it just as much as mine and you have a little culinary adventure right from the comfort of your own dinner table subscribe to my youtube channel for more recipes tips and tricks in the kitchen and don't forget to check out my website
