Please explain how to - prepare the celeriacs from seared pork fillet & catherine wheel sausage in 30-minute meals

hi i'm georgie from jamie's food team and i'm going to show you how to prepare celeriac for cooking in the microwave you start by getting a speed peeler potato peeler and you're going to need to peel your celeriac completely you don't want to eat the earthy skin so quite be quite gentle because you don't want to cut yourself at the same time quite firm to actually get it all off it's quite a knobbly unusual looking vegetable and you might have to go over the same area a couple of times make sure you get all the brown earthy skin off just keep turning it and balancing it on your board so you don't cut yourself you just want to keep peeling into all the little eyes and the little brown and green bits are gone you want a lovely clean white surface and you can trim the bottoms or the rooty edge let's go as far as you can so pierce lyric then the end bit is quite rooty so don't worry too much we can trim that bit off but finish off that push to one side and trim off the edge like that push that give your board a little wipe get all that earth away and get yourself a bowl and you want to cut your celeriac into even sized chunks so put your knife down the middle of the celeriac again it's quite a large tough vegetable just turn it around and carry on cutting to another side put your hand on top pressure to stop it from moving and then turn it onto the flat edge then you can trim off again with this part any sort of the fibrous rooty ends that you can't get your speed peeler and then you just want to chop your celery into even size chunks so using your fingers as a guide push down the weight of your hand and chop it again and then just cut it into even size chunks do you want to cook all at the same time so there we go i'm just gonna just cut off all these fibrous bits again just from here this end and then we're going to flavor our celeriac so when it's steaming it can infuse of all lovely flavors we're going to use some lemon so i'm just going to get this lemon just use half of it and cut it in half squeeze the juice in use your hands catch any pips if you don't want those to go in your food and we're going to actually put the squeezed lemon half in the bowl so it carries on infusing the celeriac um and then for a bit more flavor i'm just a couple of sprigs of thyme here i'm gonna pick the leaves off this is really soft time so just don't worry too much about a bit of stalk just pick those put them in the bowl if you've got a good sprig just hold the top of the stalk and run your fingers down backwards this is quite a soft time so you can just pull the leaves off that way some of the woodier herbs are better then once you've got all those in make sure that you've give it a good pinch of salt some pepper so some freshly ground black pepper pinch of sea salt and then also to steam it because we're going to cover cling film and you want to steam it so it cooks add a splash of hot water from your kettle and that'll steam it from the inside we're now going to cover up some cling film and that boiling water will just make sure it cooks immediately just make sure that it gets completely covered like that seal it all the way around and all you need to do now is pop that in the microwave for 12 minutes and you'll have perfectly cooked celeriac
