all right guys uh we're gonna make some crepes today uh for this morning or i have it for lunch or whatever uh first we're gonna start off with uh two eggs so we got the eggs here and basically just whisk them a little bit is the first step to making these crepes all right the next step uh once we get this whisked up a little bit uh just two eggs um is basically we'll add one cup of flour uh i like to use um whole wheat flour but you can use a regular flour it's fine i chose the whole wheat it's a little bit healthier but you can use whatever just take one cup one cup of flour and put it in then what you want to do is take one cup of milk it's actually going to be one cup and a quarter cup one cup and then a quarter cup of milk in there i use skim milk but you can use regular milk is fine and just give that a whisk in there and basically you want to add into this mix you want to add like a a tablespoon of vegetable oil or some kind of olive oil for the batter to mix up a little bit better and once it's on the pan it'll just cook a little bit better so i'll put in a teaspoon in there i'll make it two also you need to put in a little bit of salt like a pinch of salt not much you want to mix everything really good now if you got a like a regular um it's better to use a a mixer and uh i'm just doing this by hand so you can kind of see everything goes but mix it really good i would i would recommend mixing it for at least five minutes solid the longer the better when this batter should be once you get it mixed up really good it should be very thin you don't want to make it too thick it has to be pretty thin because the crepes are are thin they're not like um they're not really thick at all they're almost paper thin we're gonna be making i think we're going to make some cottage cheese and fruits we're going to make a fruit a crepe keep mixing this for about like i said the longer the better at least five minutes so the consistency is good so this is that wheat flour i use uh it's like a king arthur flower you can pick this up at a grocery store or any kind any kind of flour will do i'll just use that whole wheat hopefully you can see this it's getting pretty thin then batter makes this a little bit longer so okay that's pretty good uh the next step is uh we want to get the pan ready so we'll take a regular pan like this and oil it very lightly you want to just take a little bit of oil you can use vegetable or olive oil or take a little bit of olive oil and take it inside the pan what i do is take a paper towel a clean paper towel and just kind of spread out the oil you can use non-stick cooking spray as well just get it like a real light coating so it kind of lubric you don't need much oil at all just a very little bit don't put too much in there and just spread it out so there's a little sheen in the pan okay all right the next step will uh i'll get the let me move this camera so we'll cut this this on to medium heat medium low heat works pretty good so give that a couple a minute or two to warm up so and just want to make sure the pan is warm the the other tools i have is just uh one of these um spoons you can see that's like a plastic little spoon basically just what i do is dip it in the batter and this is going to be for flipping the crepes so once that gets warm like i said a medium low heat i got electric stove here so you have a gas just i would be around four or five hopefully you can see that a little bit okay we should be good to go it's pretty warm so what we're gonna do is um just take a little bit of the batter and spread this out but the first crate usually uh soaks up that extra oil in there so we'll see kind of how it turns out and these don't take long per side you'll see hopefully you can see in the camera the edges will turn brown and it'll start turning brown in a minute so it takes about a minute and a half or so per side it's pretty quick because they're relatively thin they might bubble up a little bit but the bubbles will go away cut this down it doesn't need to be that hot at all just medium low heat so i'll give that a couple more seconds here all right so we got the one of these crepes almost finished like i said it takes uh only a couple minutes per side i would say less than two minutes aside um this is kind of it's going to be pretty fun you don't want to make these too thin i would say uh a couple mils thick um like cardboard thick is the way to go the real skill is pouring the batter inside the pan and then just kind of spray the pan every three or four crepes to make sure the pan is oiled pretty good it doesn't take that long it's really easy to do these crepes um you can put the fruit in there cottage cheese whipped cream whatever whatever you fancy so this one is finished so we'll start batter here pour it in the plate you just want to spread it around pretty evenly around the edges just give it a you'll see them turning dark brown a little brownish around the corners on the edges rather and it'll start cooking you'll see give that another minute and like i said i use olive oil um for cooking these but it does it does smoke up a little bit so you can use vegetable oil it's probably a better way to go um to cook these in an actual mixture okay so this one's well done you can see it's pretty much done and ready to turn the way we check is just check the outsides you have to be kind of gentle with these because here let the other side cook and if you see smoke coming out of there it means they are too hot the pan is way too high you need to cut the heat down as you can see hopefully you can see that i got it way down so this this batch mixture that i made with the two eggs uh should make i would say a dozen or so uh crepes is plenty enough for two to three people for a breakfast uh snack a brunch it should be pretty much done flip it over and see how it looks it's pretty much ready to go what i like to do this is the real skill here is pouring these the batch on the on the pan so i take the pan off of the heat before this it cools it off a little bit so i can i can spread out this batter evenly without it cooking too quick and then then set it down on the actual pan hopefully that helps so like i said just give that a minute or two per side and just keep flipping it all right so this is uh the final part this is the best part of the crepe here we're gonna have some fun and finish off this crepe uh so we got i made a batch of these like i said it makes about about a dozen what i like to do is uh stuff it up with a little bit of fruit and cottage cheese inside the crepe a little bit of cottage cheese spread this out you don't need too much just just enough there to spread it out evenly and then you just kind of roll it up gently there there you go so finished crepe you can put in cream cheese any kind of cheese or toppings that you prefer i use sometimes i use like a jam or jelly blackberry strawberry are the best way to go is fresh fruit peaches are good i've even used bananas before so you get really creative with these like i said this makes about a batch of dozen and put some whipped cream on top and there you go thank you
