hi welcome back to the AMA ready Test Kitchen today I am going to make focaccia and the first step in making focaccia is to make biga Ambiga is a pre fermentation that will give texture and a lot of flavor so it's a little time consuming because you have to let it sit overnight but it's well worth it and I suggest you take this extra step when you're making your focaccia so this is what we're going to do this is some slightly warm water and a little bit of yeast mix those two together stir it till its dissolve and you just add the bread flour this is now a doe viga is a little stiff and it feels a little tough it's not quite like a starter because the starter would be more moist but this is all you do we're going to sit this in here and we'll get a little spray because I don't want the plastic to stick to it cover it up and then it sits overnight 12 to 18 hours and we'll come back when it's ready one utility lay down ok so here you have the Bigga that we made last night it's been sitting overnight and it is ready to be added to the other ingredients for making the focaccia you're going to punch that down a little bit we'll add it to the other ingredients so it's important to have this be yet because as I said it's going to give a lot of flavor and texture to the bread you wouldn't have otherwise and just for fun I'm going to also add some herbs rosemary and thyme and some base you you alright so the focaccia has come out of the oven and i am going to brush it with the UM already olive oil that is infused with kalamata olives because this really gives it such a nice flavor and it just really adds everything to the bread so once the breads out of the oven just give it a good brush and that's it thanks for joining us today I hope you enjoyed the video and please get some of this olive oil and try it on other products it's really wonderful be great on salads and it's great to drizzle on just about anything we would love to hear from you please leave us a comment below or reach out to us on instagram at amaretti or on twitter tag Adem already foods see you next time
