hello welcome to the kitchen I'm really excited I've got a special guest Katie Pix! Hellllooooooooo!
it's not the best intro to any video you've ever seen
we've got a glamorous assistant haven't we? and he's got a matching jumper! I kind of lied to you because i said because I said with we were gonna do gingerbread
but in actual fact it's more the kind of brown sugar spice biscuit, it's gonna have
to same effect, it's really nice it's a bit different
with some gingerbread on about you But it's kind of la bit long-winded you
know when you see the wet dough like leave it chilling for two hours, you've done that? Bit boring so we've got kind of that quicker version it's still really nice and
Christmassy and that you need these watch. ahhhhh Helllooooo! I don't know where that came from! if you made sugar cookies before,
I've genuinely made your sugar cookies before..Ahhhh! did they work? They did! room-temperature butter are lovely but
400 grams straight, light muscovado sugar instead of normal golden caster
that would give you more of that fudgy kind of darker beautiful dough. We're gonna mix that
just so it's kind of like combined not like a sponge where you do it til pale and creamy or the biscuits will spread s, only just mixed!then we just need to add to add two eggs so do you mind crack
those eggs in there for me Katie if that's all right I't my moment I'm so excited. do I go cocky and go one handed? Go on i can't do that so i'd like to see....I always ruin it! Oh look at that! I mean, that completely smooshed the yolk, but thats okay because it's gonna get whipped up anyway!
As long as you don't get any don't get any shellage Any shellage in there? No! just give me another go on
slow sort of make sure that I'm gonna want to
eat raw. do you? Yeah! not for me! sometimes I wil literally take cake
batter put it in a cupcake and don't cook it just eat it with a spoon! EEeeeeeewwww!
in here we've got plain flour got some ginger we've got some cinnamon and bit
mixed. The spices of Christmas yeah it's wonderful. Smell it! so that literally
just gets dumped into the mix all in one go. Literally all of it? just all of it yeah just dump
it all in thought it was going so well I thought spill everything but behind this side there might be I've got a question for you? How did you get into baking? question actually I'm by accident
completely when George was born I did a massive party like a welcome to the world
party so I had about hundred fifty people
around in the party and did all the food and stuff and somewhat better do him
cake and I did to make a can I just really enjoyed it and got into the kind
of I just really enjoyed the kind of crafty aspect and cuz I have three kids
onto three I just kind of started doing the birthday cakes okay yeah. What a lovely story!! Yeah it's true its true! Oh well done George for being born! so let's roll this
out so first of all I just kind of bring the dough together a little bit could
you know how you don't want to overwork it it's a bit tough so bring it together first
make a bit of a sausage then I do the dusting okay. Don't get too much flour
into it. Have you used these before? No! I honestly thought you just got a bit of building material
I mean someone's been genius there in making that a purchasable piece! Little bit of the ol' dusting there! do you like to turn it I do like to
turn it, do you? and make sure we don't stick little bit so I'm like oh but I don't do
that! Ooooh! Oh it's ruined now!! Ha haa! so yeah a lot of people do that with
sugar paste as well yeah and then it just dries out too much it that's fine
it's fine because I think we saved it what we're gonna make today it's like a
gingerbread, well obviously, christmas spiced wreath! I'm quite into my wreathes they're
really nice just to have by themselves or what I like to do then is decorate
cakes with them Oh looks really nice. How big is your cutter collection goodness
I've got a whole shed full but who I do do lots of baking. so I baking is
kind of my relaxation cooking so I'll bake at the weekend most of my videos
are savory yeah yeah baking is why I bake you use like my relaxation yeah I
mean coming here is like Aladin''s cave! Just them out and then they're really they
don't spread to much ah that snapped a bloomin'! Yeah that cutter is a bit sort of
like this one of those once it's got the small bits which is annoying. That's a lie, but i'll take it! that's really kind oh I went cocky and I
got too close to the edge. Ah I've done it again! That one's for Douggie. Let me do it I bet it happens to me. No it won't. and then just, oh i did it as well!
dodgy bit yeah. They will last for like, a good ten weeks you wrap them up well so
you can really like get all your Christmas baking done in advance, could
you cut a little hole in the top and create a tree decoration you can and
you know I've got a really special trick for that and I'm halfway through the
baking time take them out and use a plastic straw and just put the straw in
and every so often just trim the blockage off
and it's very stays up in the straw and then you put them back in the oven to
bake more why halfway through otherwise they kind of get a bit too firm to sort of
stab through and they can crack. We're gonna carry on doing these now and then
we'll come back when they're all baked yeah
yeah Christmas spice cookies are baked! They look beautiful it love you already don't they in their cute little shapes I like going over the top and doing we amazing color things but for
these I quite like pure like white on the kind of cookie so it's really kind
of traditional so I've got some royal icing even you're quite good at piping aren't
you not in your level, but. For an amateur yeah I'm worried I'm gonna turn it onto a spider web. shall i show you one yeah yeah let me inspire you I'll start
at one end yeah and then lift up and then touch in and
now I kind of do the little clonk at the end now though so I kind of just go
round drop stop. Stop squeezing, and then please for those squeeze and then drag oh
that's beautiful Ohhhh, middle squeezer yeah! Are you not? I'm at I'm
a squeeze the end around small amount that's the thing isn't it with anything
like baking sugar craft, anything like that you've got to find your own way I mean this is just the loveliest like
weekend activity does everyone in your family get baked goods for Christmas I
do baked all the times I think everyone in my family gets baked goods around but
I do try make a special effort at Christmas I will do some gingerbread
I'll do some tree decorations never used to like Christmas cake when I first start
in cakes hated it but I now do one every year, and I do it in a big long bar
because my Christmas cake recipe is very like a chutney in qualitiy, I
do love kind of right cross-stitch samplers I put my pictures on and then
with slice it with cheese we do that every year, it's a tradition! Er, is that on your channel? NO! He hee! Er,
just to say I don't want to show off or anything I'm really happy with that

because I've got loads of walls there but nothing on you can add some ginger a
Christmas frames! stop it! I've done that before many a time. You did a real live gingerbread
house? Erm, I have done a real gingerbread house that I had my lunch in before...... but
what's the most difficult job you've ever done in in food I'm just a cook who
essentially I cook to eat I just love food
I remember going a meeting a team who like do you know what just to get a feel
of you wanna cook us dinner and there were 10 people scary and cooking down
dinner for 10 people who you don't know who have a real expectation of you're
yeah that's something like being on MasterChef or something! As I say it's horrendous I'm currently I've
iced two we do this where we go like this and go to the next bit where we do
them the cake decorating we've got our cakes! We've got our biscuits so we're
gonna decorate them now can we just say most perfectly iced cake you know noone's
gonna want to eat it! do you have somewhere that we can learn how to ice a
cake properly well it's very interesting you asked me that about it thank you very much yes I do
I've got a little video tutorial on how to ice a cake perfectly, having a few top tips you
need and it's not difficult but it's I'm excited to see that oh yes my icing with
cake icing experience has not gone smoothly. Pun! brilliant Do you mind if i just, handle your biscuits? Handle away! so I like to kind of maybe pick three larger
ones and then sort of start to build up different size and just kind of build up the wreath so you've got the sort of like, center. I like to position first before I
commit to my sticking because then you can kind of arange them and then and
then stick now if you make a big mistake we're dealing with white icing, so you're
probably gonna cover it up anyway but I kind of just sort of position it a bit
okay you know and then I just sort of, you know plan out that yeah, yeah, I might
have I gone to o much already? No this is the thing you've got to be creative and do
your own style three layers too much start building getting two first and then
maybe add to three here and they're gone quite heavy. are you supposed to use this many/ I would
say start with maybe three large three large I'm gonna use this as the
Christmas cake on Christmas Day. Are you? Yeah I am! Oh good!! And take full credit yeah. He heeee! where do you get your
aesthetic knowledge fro. It just comes to me in the dream state
just makes a little green Holly and berry so we're gonna have that at the
top of our wreath, just to finish off, yeah if only you could see dougie right now he looks like a
doorstop he's so funny isn't he! he's just gorgeous and back to your
thing about keeping it for Christmas definitely you can keep your Christmas
and put it into a cake box yeah wrap the cake box with cling film okay
so don't have it kind of like touching onto the cake, so it doesn't sort of, sweat but it wil just kind of keep the biscuits a bit fresher and then
a couple of days before you want to eat it you can just open it up and then have
you know you have done some crazy bakes though haven't you
world's first edible Christmas jumper yes I saw that! yeah I was like OMG is it
gonna work but yeah that's that was amazing do you need another small one? Yeah if you've got one, I've got another small one
yes I'm not happy with the icing on this one hang on let me see what i can find. They're
really tasty. I just inhaled a crumb!!! this is when I think, would be rubbish on Bake Off so I've made these a couple of days ago, so
they've kind of set get a little bit of icing on the back it's become one of my
favorite cakes to make. It's beautiful. oh like come on! Brilliant! Did you enjoy doing that? I LOVED it! I always love baking with you though, genuinely, thank you really
