[Intro music] Egg mayonnaise is a simple starter dish of hard-boiled eggs and mayonnaise. But of course, you will have made your own mayonnaise to make it a delicious dish despite its simplicity. To make an egg mayonnaise, you will need: hard-boiled eggs, mayonnaise, paprika, chives, and a few butter lettuce leaves. Wash and pat dry the lettuce. Then fold the leaf without breaking them and cut them into thin julienne. We call that chiffonade. Place the chiffonade over the plate. Place the half eggs yolk side down. Place the mayonnaise in a bowl. Whisk the mayonnaise. Add a little bit of cold water, just to extend the sauce. And whisk until the sauce becomes smooth again. So you want to have the sauce thin enough to coat the top of the egg without being runny or too thick. So that's a good consistency. Taste. Delicious. It doesn't need any more seasoning. Get a good tablespoon of sauce and cover the egg. Same thing for the other half. Make sure all the egg's been covered by the sauce. Sieve a little bit of paprika on the top of the egg. Add a little bit of chives to decorate. So cut the chive diagonally. Place the chive on the top of the egg, crosswise. Voila. Egg mayonnaise. Bon Appetit.
