okay today we're going to learn how to make sicilian fish juice incredibly easy to make and absolutely delicious to start with um just chop up some onion celery chilli and uh crush some garlic into a pan of oil or pot rather add some garlic preferably crushed put the lid on and let it sweat for a few minutes until they're soft right um add a bit of wine probably more than that so i wasn't being very generous there some chopped tomatoes a bit of fish stock potatoes well you don't have to put in potatoes a bit of salt pepper of course and some tomatoes just to sort of thicken it a bit and yeah oh and uh a bit of lemon of course just gives it a nice bit of a zang to it there we have a pinch of saffron just a tiny bit but as soon as you add that and you can just really smell it just smells absolutely wonderful and the tomato puree you can put in if you want just to help thicken up the stew and um let that cook up for 30 minutes or an hour i put it in for an hour because i put potatoes in and they weren't boiled so i wanted to make sure they were nice and soft right so i chose uh salmon and hake i don't know what it was it was just at the fishmonger and i thought why not and uh some prawns not exactly your locally freshly caught stuff but it will do i'm in london and they only really need to be cooked for a few minutes and there you have it and add a bit of parsley on top nice freshly cut and if you want squeeze a bit more lemon maybe a bit of pepper what goes really nice it's a bit of bread just any old french baguette will do lovely well that's all that's all there is to it really it took i don't know an hour to cook really um you know it's just amazing
