Please explain how to remove the cheek meat from a walleye

hey yeah this is that same walleye from before that isolated I'm going to show you something that could make somebody cringe so we've got a weak stomach or something turn it off I get a bag ready to discard the parts alright what we're going to do is we're after the best part on that on this fish in my opinion the cheeks you can feel the meat in there it's a little bit difficult to get to if like I said you got a weak stomach or something so I'm not somebody like that so here goes look away if you don't want to see alright I'm going to actually take this and rinse it off you be a little bit better visual without all the blood on the board take a small little paring knife like this one here started a super-sharp but we give it a couple crosses across steel what you're going to do let's take the head and come right down behind the eye here hmm and go right down into there and you'll feel it hit bone go down as far as you can into that without cutting through the bone and come up towards the top of the Hat like this go back towards that Gill and come up now what you're going to do is go around towards the bottom jaw and come back up like this this is the best piece of the wall I don't really know how to explain it it doesn't have the texture of fish um sauteed in butter with garlic it's delicious deep fried it's delicious whatever you want to do but make sure you don't discard the head and throw this away it's the best part it has skin on the bottom you can get rid of that real easy just same way we did the fillet just a real close cut like so and now you have a skinless why lie cheek all you people that laugh at me from eating these I'm gonna be eating less good later it's delicious all right you can get rid of that skin come over here and uh do the same thing on the other side which you've already seen how to do it so that's it for the video delicious walleye cheeks
