hello welcome to another edition of cooking with the wax star hunters and today we're gonna cook probably a simple meal but it's great we're gonna cook some Appalachian style squirrel called Appalachian style because it's the way my grandma used to make it and that's the way her grandma used to make it back in the back of mountains of West Virginia when they grow up so first thing we do like always salt you're meetin nice little salty on there add some black pepper and some chili powder and next we're going to take it over to the stove and we're going to go get a nice uh nice brown on this meat and then we're gonna put in our liquids and get it cooking all right we're gonna put our little squirrel pieces down in here into this pot and start getting a browning you just want enough just to coat the bottom of the pot you don't want to overfill it so we've got two squirrels here come in there to let them Brown nicely on that side and we'll flip them over get them brown on the other side and then we'll add our liquid so we're this we're gonna simmer them until they're nice and tender all right flip these over they've got nice and brown on one side come on brown few minutes on the other side you know what are the Queen we've got to add to it is some homemade deer stock that made just a few days ago and we're gonna add in some cranberry juice make it a little bit sweet right there we're gonna cover the squirrel and then we are just gonna let that simmer it's been bubbling here for about an hour now so it's all nice and tender cooled down so we're gonna do is dredge it in the flour and then fry it and butter so a little trick that I've learned is just getting a ziploc bag throwing your flour in there throw in all your meat pieces in there and then you're gonna close it but make sure you have a lot of air in there so you're a flower can just throw a coating fix it there take it just like the old shake and maybe get all the flour all the squirrel covered in flour and then we're gonna pull this out and we're going to start putting it in our brown butter just the way grandma used to make it every Saturday when we got back from squirrel hunting with my grandpa he'd clean the squirrels and shoot cook this her recipe nice golden crispy beautiful now that they're all nice and brown we'll go ahead and pull these guys at pouch there we go now they're done pull them off pull them up and put them on the plate we're gonna do or squeeze a little bit of lemon on there little bit of lemon juice give a little bit uh a little bit of kick with a citrus and enjoy wait wait grandma used to make so thank you for joining us out of whack star hunters can remember hug hard and eat good you
